Chicken Salad Melt Sandwich

I love a melt sandwich and this Chicken Salad Melt Sandwich is one I make weekly! I have the perfect Chicken Salad recipe and it's great with melted provolone cheese and a light, airy, buttery croissant!

Ingredients
  

  • 2 cups chicken salad
  • 4 croissants
  • 8 slices provolone cheese
  • Lettuce, tomatoes, pickles

Instructions
 

  • Couple Hours Before: In a medium bowl, stir chicken salad ingredients together and refrigerate
    2 cups chicken salad
  • Preheat oven to Broil - Low and line a rimmed baking sheet with parchment paper
  • Slice Croissants and open. Lay on baking sheet.
    4 croissants
  • Add 1/2 cup chicken mixture to each croissant.
  • Lay 1 slice provolone on top of chicken salad and on top of open face of croissant and repeat for all sandwiches.
    8 slices provolone cheese
  • Place baking sheet in oven for 2-3 min until cheese melts and croissant is toasted. Watch closely as broil it can go from toast to burnt in a minute!
  • Remove and add toppings and serve with chips and broccoli salad!
    Lettuce, tomatoes, pickles
