My Traeger Smoker has been working overtime this summer. These Smoked Bacon Wrapped Cheese Stuffed Chicken Thighs are going to be on your grill the rest of the year!!!! Boneless chicken thighs are so juicy and tender – then add a little smokiness and you’re golden!

These little bacon-wrapped nuggets are so tasty – you will want to make sure you get a giant package of boneless, skinless thighs because everybody is going to ask for seconds and thirds. (The leftovers are even better!)

How do you smoke chicken thighs?

I have a Traeger Smoker and Grill – so it’s super easy. I set my Traeger to 225 and make sure the pellets are full – I have hickory pellets in right now. Smoking is low and slow with a full container of pellets.

The chicken thighs are skinless and boneless – but by wrapping them in bacon – you’re basically adding skin on them – and I’ve found that pretty much everything takes 2 hours to smoke. These took a little less – about an hour and 45 minutes. Be sure to check meat with an instant read digital thermometer – then you’ll know it’s done! I take them off at 160 – and let them rest for a few minutes and they continue cooking and get to 165.

You can also speed this up and grill at 350 – then they’ll be done much quicker – but won’t have as much smoky flavor.

How do you make bacon wrapped cheese stuffed chicken thighs?

It’s pretty easy to make these cheesy bacon nuggets of deliciousness! I thawed the chicken thighs and rinsed them. Then took them out and laid them flat – in the center I added a couple of strips of colby jack cheese. Next fold your chicken thighs over and then wrap a slice of bacon around them.

Here’s a tip – I wrapped the bacon the same way I folded the chicken – MISTAKE! Wrap the bacon so it seals up the ends! This way your cheese won’t leak out on the grill. The chicken thigh roll up into a bit of a ball anyway – you could even add some mushrooms inside – I’m doing that next time!

Once the bacon is wrapped around the thigh – use a toothpick to hold the bacon in place. Another tip – do not use COLORED toothpicks – because the dye will get onto your chicken. bhahaha – yup – I did that too!

Instructions
 

  • preheat Traeger to 225
  • slice cojack cheese into long strips 
  • place inside flat chicken thigh
  • fold chicken thigh over
  • wrap a slice of bacon around the chicken thigh – using the bacon to cover the open end so the cheese doesn't ooze out and hold in place with toothpick
  • sprinkle with bbq seasoning
  • when Traeger comes to temp at 225 – place chicken on grill
  • Smoke for 1 hour
  • Brush with BBQ sauce and smoke for another hour
  • Check temp and take off when chicken is between 160-165 degrees
  • Let rest until up to 165 and serve!
