My friends at Local 12 called and asked if I could whip up something healthy for a change - HEALTHY?! Uh - sure I can do that! (I'll be on at 840am today!)Blueberry Jam from IKEA and thought it would make a great vinaigrette. I have a raspberry dressing I like a lot - so why not blueberries? Once I opened the jam - I knew I was in for something delicious! The jam was packed with blueberries and was super thick - I might have dove in and tried some. :-)

I could probably just eat it by the spoon!
I dunked a hunk of romaine just to see how it was and I knew I had something good here!
1/4 cup blueberry jam
1 T Dijon Mustard
1 T Balsamic Vinegar
1/8 cup water
1/8 cup olive oil
Whisk together blueberry, mustard, vinegar and water. Slowly whisk in oil. Refrigerate for up to one week. Shake before serving. Makes enough for 3-4 salads.
