Ingredients for Cheesy Chicken Pasta
I love all the flavors and ingredients in this Cheesy Chicken Pasta. I suppose that’s why I used them! (haha) It’s like a cheesy chicken goulash! Here’s what you’ll need (and substitution ideas):
- 2 Tbsp olive oil – you can always use non-stick spray or butter
- 3/4 pound boneless skinless chicken thighs – feel free to use chicken breast if you like or even chicken sausage
- 1/2 small yellow onion – sweet onions work best
- 4-6 oz fresh mushrooms, sliced – you could also use bell pepper, broccoli, green beans or asparagus
- 1 Tbsp minced garlic
- 1 – 14.5 oz can chicken broth – you could use water
- 1 – 14.5 oz can diced tomatoes, Italian – want it spicy? use a can of Rotel tomatoes or toss in some red pepper flakes!
- 1/2 cup milk – you could also use heavy cream or half and half
- 8 oz macaroni – any pasta will work – like penne pasta or rigatoni
- 1/2 tsp salt & pepper, each
- 1 cup shredded Colby Jack cheese – this is my favorite cheese – but cheddar cheese, Monterey jack or mozzarella cheese would also work! (I also threw some Mozz on top!)
How to make Cheesy Chicken Pasta Recipe
- In a large skillet – preferably deep dish, add olive oil and turn to medium-high heat. Once pan is hot, add onion, chicken, mushrooms and garlic – cook until lightly browned – about 5 minutes.
- Add chicken broth, tomatoes, milk, macaroni, salt and pepper and whisk together. Bring the mixture to a boil, cover and reduce heat to low. Simmer for about 12 minutes or until pasta is al dente (or fork tender).
- Turn off the heat and stir in cheese.
- Serve with a side salad and garlic bread.
