Recipe: Air Fryer Dill Pickle Chicken

So everything “dill pickle” is in right now – there are chips, sunflower seeds, ice cream and even popsicles! I’ve been hearing a lot about pickle-brined chicken thighs – so I had to try it! I even pickle juice is behind the yum that is Chick-Fil-A.  

I went for chicken thighs marinated in pickle juice and then cooked in my air fryer! They were amazing and versatile. You could have them on a little slider sandwich or like you would fried chicken with mashed potatoes and veggies. 

How do you brine chicken in pickle juice? 

It’s super easy – you just take your chicken and put it in a ziploc bag and then pour the pickle juice over top. Zip it up and put it in the fridge overnight. I had a jar of half-used pickles so I just poured off some of that pickle juice. 

After the brining – I coated the chicken thighs in mayo and then panko crumbs and into the air fryer! I think the mayo keeps the chicken extra juicy. In this recipe I used chicken thighs but you could easily use chicken breast as well. 

I decided to have my pickle-brined chicken thighs open-faced on an egg bagel and top it with more pickles! So good! You could also bake these in the oven – I would say 15 minutes at 350 – but temp them to be sure they’re done. 

I know you’ll love these dill pickle chicken thighs as much as I do! They’re definitely a regular meal for me! And so quick and easy!

ingredients:

  • 3/4 pound chicken thighs (or 2 chicken breasts)
  • 1 half empty jar dill pickles
  • 1/4 cup mayonnaise
  • 1 cup panko bread crumbs
  • 2 tsp salt
  • cooking spray

instructions:

How to cook Air Fryer Dill Pickle Chicken

  1. put chicken thighs in a ziploc bag and pour pickle juice over thighs until all chicken is submerged
  2. marinate overnight
  3. set out two plates next to air fryer – one empty and one with breadcrumbs and salt (stir lightly)
  4. remove chicken from bag one piece at a time and set on empty plate
  5. spread mayo onto chicken and spread all over piece – flip chicken and add a little more mayo so both sides are coated
  6. move chicken to panko crumbs and flip to coat
  7. spray chicken lightly on both sides with cooking spray and put into air fryer
  8. repeat for all chicken pieces
  9. cook at 350 for 6 min
  10. flip – and cook at 350 for 6 min more

– if using chicken breast – you may need more time – always temp your meat – chicken should be 165
