Ingredients for Air Fryer Beef Roast

This recipe produced a juicy and delicious, keto-friendly, beef roast in a total time of less than 45 minutes! Definitely a delicious dinner! Here’s what you’ll need:

  • 2 pounds beef roast – you can use round or chuck roast
  • 1 tablespoon olive oil – swap with avocado oil if you like
  • 1 tablespoon Worcestershire sauce
  • 1 tbsp minced garlic – or 1 tsp garlic powder
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon black pepper
  • 2 sprigs fresh thyme

Recipe Variations

  • Fresh Herbs – rosemary, oregano and Italian parsley are other great options if you don’t have fresh thyme
  • Steak Seasoning – If you’re looking for an all-over seasoning – steak seasoning works great as well!
  • Vegetables – You could also definitely add chopped carrots and/or potatoes to cook with the roast. They’re hard vegetables and will definitely cook through in the 30-40 minutes of cook time.

How to Make Air Fryer Beef Roast Recipe

This is a very simple recipe to make – just whisk a quick herb rub together and place in the air fryer. You can also use the drippings to make a delicious gravy!

  1. In a small bowl, whisk together olive oil and Worcestershire sauce. Add in garlic, salt, onion powder, Italian seasoning and black pepper.
  2. Rub the seasoning paste over the entire roast. Place the roast in the air fryer basket.
  3. Air fry at 375º for 8 minutes to sear the roast. Turn the roast over and add thyme sprigs to top of roast. 
  4. Continue cooking at 250º for another 30 min. Using an instant read meat thermometer, check the internal temperature of the meat to be sure it’s 120-30º for medium rare. The edges will be closer to 130º – while the center is 120º.
  5. Remove the roast from the air fryer and tent with foil. Allow to rest for 10-20 minutes. This allows the juices to absorb back into the roast. Slice and serve with your favorite sides. 
  6. While the roast rests, remove the tray from the air fryer. You can use the drippings that collect in the bottom of the air fryer to make gravy. Just get the liquid and not the bites of garlic as those will be bitter. Pour into a small saucepan. Whisk in 2 tablespoons of flour and 1 cup of water and 1 cup of milk or cream and bring to a simmer. Whisk frequently until thickened – about 3-5 minutes. 
  7. Slice roast against the grain and serve in thin slices with gravy and your favorite side dishes.

Tips, Tricks & FAQs

What cut of beef should I use?

Chuck roast is the best to use as it’s the most tender – but I used a bottom round roast for this recipe. It doesn’t have quite as much marbling but it provided a very delicious end result!

Can I brown a roast in the air fryer?

Yes – if using oil in your rub – it will most definitely brown in the air fryer! Be careful with higher temps – it will cook quickly but leave you with a tough piece of beef.

Does air fryer beef roast come out tender like a low and slow pot roast?

No – it’s more like “roast beef” or like a very thick and delicious steak. The air fryer is a wonderful tool – but it’s just not meant for low and slow.

How long do I add to make it medium well?

You could add 2-3 minutes at a time. I highly recommend not going above medium as it will get tough.

Can you make pot roast in an instant pot? slow cooker? dutch oven?

How do you store and reheat leftover beef roast?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.

Ingredients
  

Gravy

  • 1 cup milk
