Big Mac Quesadillas is my new favorite quick dinner! It’s a whole new take on the famous fast food burger and a quesadilla! Tortillas filled with a hamburger, cheese, pickles, lettuce and Big Mac sauce – so yum!

What You Will ❤️ About Big Mac Quesadilla

  • Fast Food at Home! Big Macs are so tasty and it’s fun to make this version at home!
  • Blackstone or Skillet! You can make this on a Blackstone griddle if you have one like I did – or you can make it on a skillet or an indoor griddle!
  • Full of toppings! Load up the burger with grilled onions, American cheese, lettuce, pickles and – of course – Big Mac Sauce!

Big Mac Quesadilla Ingredients

We all know the song – jut replace “on a sesame seed bun” with “on a low-carb tortilla” – hahaha – at least in my house. Here’s what you’ll need:

  • Flour tortillas – I love the La Banderita Carb Counter soft taco tortillas – you can use medium flour tortillas
  • Ground beef – I would go for a lean ground beef (85/15) so you’ll have less shrinkage
  • Lawrys Seasoning Salt – a quick shake to add a little seasoning to the burger – you could use salt & pepper instead if you like
  • American Cheese – I always use Land O’Lakes American cheese at home – it’s so much better than the plastic slices!!!
  • Shredded lettuce – good ol’ iceberg lettuce here – use the leftovers for a quick salad
  • Sliced pickles – I love making at home so I can have as many pickles as I like!!!
  • Diced onion – You can use yellow or white onion – we’re going to grill the onions before the burgers go on – so yum!

Burger Sauce Ingredients

You’ll also want to make up a burger sauce – this is close to the special sauce and really tasty! All you do is mix it all together – here’s what you need:

  • Mayonnaise – I always use Duke’s mayo
  • Dill pickle relish with a little of that pickle juice
  • Minced onion – just chop a little more from what you’ve got for the burgers!
  • Ketchup
  • Yellow Mustard
  • Vinegar – you could also use Apple Cider Vinegar
  • Seasonings: Sugar, Paprika, Garlic Powder, Salt & Black Pepper

Recipe Variations

Burgers are pretty much a blank slate – so there are a lot of fun variations you could make to these Burger Quesadillas! Here are a few ideas:

  • Bacon – add bacon to the griddle before the burger and make it a Bacon Big Mac!
  • Turkey – make it a little healthier by using ground turkey
  • BBQ Burger – swap the Big Mac sauce for BBQ sauce and add more onions!
  • Queso – lean into the Quesadilla aspect and swap the big mac sauce for queso and sprinkle cumin on the burger and top with guacamole!

How to make a Big Mac Quesadilla on the Blackstone

These cheeseburger quesadillas are easy peasy to make and smashing the burger before cooking is fun and makes them cook quickly! This is written for the Blackstone – but you could easily make these one at a time in a pan on the stovetop or 2 at a time on an indoor griddle.

  1. For the Burger Sauce – Earlier in the day, mix all of the sauce ingredients together in a small bowl and set aside in the refrigerator. You might want to double the sauce recipe if you want to serve quesadillas with a side of extra sauce for dipping!
  2. Divide the ground beef into 4 portions and spread one portion onto each tortilla. Spread it thin across whole tortilla. Sprinkle each with Lawry’s. 
  3. Preheat the grill to medium heat.
  4. Squirt oil on the grill and add the onions. Sauté for 2 minutes and move to the side of griddle.
  5. Raise to medium-high heat and add the tortillas to the grill – meat side down. Cook for about 4-5 minutes or until beef is cooked through.
  6. Scrape underneath the tortillas to loosen the beef and then flip each tortilla. The burgers will have shrunk – don’t be alarmed – you’re folding it – so there is still plenty of meat!
  7. Add 2 slices of American cheese to each burger and let cook for another 2 minutes – covering with a cloche food cover until so you get that melty cheese!
  8. Turn the heat off on the grill. Remove tortillas and lay on paper towels briefly to absorb any excess oil. Then move to a cutting board or cookie sheet.
  9. To make quesadillas, add cooked onions to each tortilla. Then drizzle with special big mac sauce you made earlier over whole tortilla. Add pickles and lettuce to half of the tortilla. 
  10. Use spatula to fold over the untopped half of the tortilla to make your quesadilla.
  11. Remove quesadillas and serve with extra dipping sauce

How do you store and reheat leftover quesadillas?

Remove lettuce and store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the air fryer at 300º for 4-5 minutes.

Ingredients
  

Quesadilla

  • 2 cups shredded lettuce
  • 1/3 cup sliced pickles
  • 1/3 cup onion diced
