What You Will ❤️ About Blackstone Breakfast Tacos
- Quick & Easy – use the Blackstone to make the components & then top them and eat!
- So Filling! Scrambled eggs, sausage, veggies and more!
- For a Crowd! You can feed a ton of peeps with these breakfast tacos – especially if you add side dishes like fruit, refried beans, hash browns, etc!

Ingredients for Breakfast Taco Recipe
Simple ingredients for these tacos – but you can easily make them your own! Here’s what you’ll need:
- Large eggs – scrambled eggs are the base for these tacos
- Milk – I like to add a little milk to the eggs for scrambled
- Salt & Pepper – add more seasonings if you like but at least s&p
- Breakfast sausage – I typically use Jimmy Dean or Bob Evans
- Diced bell pepper & yellow onion – I like adding some veggies in here!
- Cheese – you can use a melty cheese if you like but I had some leftover Queso Fresco crumble cheese and used that
- Street taco flour tortillas – these are fairly small shells – so each person will want 2-3 tacos – or use larger shells. You can also use corn tortillas if you like
- Favorite Toppings: salsa, avocado, fresh cilantro – whatever toppings you like – add sour cream or queso if you like

Recipe Variations
You can easily change the main ingredients for a whole new recipe – here are some ideas but use your preferences!
- Cheese – make these meltier if you use a cheese like cojack or pepper jack
- Meat – use shredded beef or pork or even chorizo instead of breakfast sausage
- Vegetarian – leave out the meat all together and add more veggies like mushroom, zucchini or potatoes
- Sauce – add some hot sauce to your eggs for more zip!

How to make Blackstone Griddle Breakfast Tacos
For this recipe, I cooked the components of the recipe on the Blackstone (eggs, meat, veggies, tortillas) – then brought it all inside to assemble the tacos! Less bugs!
- In a bowl, crack eggs and add half and half, salt & pepper. Whisk until yolks are broken and everything is fully incorporated. Whisking helps add air into the eggs to keep them light.
- Preheat Blackstone on Medium-high Heat
- On one side of griddle add sausage, pepper and onion. Brown sausage for 3-4 minutes – chopping and mixing along the way.
- Once sausage is on the griddle – on the other side of the griddle, spray lightly or drizzle with oil onto the griddle cooking surface. Use your spatula to spread around butter and keep it out of the drain.
- If you have a InstantPot – take out the silicone ring from the lid (or buy an extra) – it’s a great tool to use here!!!!
- Turn dial down on oil to Medium-Low heat and pour egg mixture into silicone ring if you have one!! If not, keep large metal spatula on its side at the top of the grill to block the grease trap. The tilt of the griddle will pull the eggs out the grease trap – so block this area with your metal spatula or you’ll lose your eggs!
- Once eggs start to cook after a minute or so, start using spatula to pull eggs from the edge toward the center and start slowly folding the eggs over – like you would scramble eggs on the stove. Keep the heat low and go all the way around the edges – using the spatula to pull the egg in toward the center.
- Continue pushing the egg in when cooked and slowly moving around until all of the egg is cooked but still wet. Once eggs are set you can remove the silicone ring if using.
- Move sausage mixture to lower heat side of griddle with eggs and turn heat to low.

11. On hotter side of grill, add tortillas for 30 seconds per side just to warm.
12. Once flipped, spoon egg and sausage mixture onto each tortilla. Top with cheese, salsa, avocado & cilantro and serve!
