Blackstone Pancakes

Blackstone Pancakes are now my favorite way to make this breakfast treat! You can do a bunch at once and customize them for each person! Light, fluffy and oh-so-tasty!

- Pancakes in a Bunch! The Blackstone is bigger than your normal indoor griddle so you can make all the pancakes at once! No more using 3 pans at once!
- Try Fun Toppings! I packed up some topping ingredients and took them outside with me – it was fun to try them on a couple of the pancakes!
- Easy Cleanup! All you have to do is scrape to the trap, throw some water on and wipe clean!

Pancake Ingredients
These are based on my IHOP pancake recipe – but if you like to add a touch of cinnamon or vanilla extract – go for it! Here’s what you’ll need:
- 1 1/4 cups all purpose flour
- 1 large egg
- 1 cup buttermilk
- .5 cup half and half
- 3 tbsp granulated sugar
- 1 1/2 tsp baking soda
- 1/4 cup vegetable oil
- 1/2 tsp salt

Pancake Recipe Additions
Not everybody likes a plain jane pancake – here are some fun ideas to jazz up those flapjacks!
- Blueberry – I love dropping fresh or frozen blueberries into my pancakes – right on the griddle. Fill them up!
- Pineapple Upside Down – once the pancake starts to bubble sprinkle about 1 tablespoon of brown sugar on the pancake and place one pineapple slice and a maraschino cherry in the middle. Then flip until done. They do take a little longer to cook and don’t overdo the brown sugar – it gets a little messy!
- Chocolate Chips – a sprinkle of chocolate (or peanut butter) chips are always a favorite!
- Tacos – Make plain pancakes and turn them into tacos like IHOP! Filled with strawberry cheesecake filling or bananas and caramel! Or maybe even chicken and a pickle!

How do you keep pancakes from sticking to Blackstone?
I have seen a lot of questions surrounding what is best to non-stick substance is best for cooking pancakes on a flat top grill in terms of preventing sticking. Here’s what I tested and the results:
- Butter – melted butter burns quickly. It browned the edges very quickly (almost burned) but the first side soaks all the butter up. Good flavor though.
- Bacon Up Bacon Grease – browned the edges very quickly but doesn’t add the flavor that butter did. Now if you’re making bacon, you can slide some grease over but it’s going to “dirty” up the pancakes a bit.
- Non Stick Spray – this works great and you can easily put a new coat between batches of pancakes.
- Nothing – If you’ve seasoned your Blackstone properly you don’t NEED to put anything on the griddle. I’ve only used my griddle like a dozen times and with nothing on the griddle the pancakes did not stick at all!
Overall – I recommend either the non-stick spray or using nothing at all! The pancakes won’t stick and the added “flavor” isn’t worth the additional burn/cost of butter or bacon grease.

How to make Pancakes on the Blackstone Griddle
Pancakes on the Blackstone are definitely easy peasy! My biggest tip is to take EVERYTHING outside with you: batter, Blackstone tools, platter with lid for pancakes as they’re done, flavor additions (blueberries, etc).
- In a large mixing bowl, add flour, buttermilk, half and half, eggs, sugar, baking soda, vegetable oil and salt. Mix with a whisk until mostly smooth and let rest for a few minutes while you prep your griddle. (A few lumps are fine!)
- TIP: Cover the large bowl with press & seal before you go outside!
- Preheat griddle over medium heat. Check griddle temperature with infrared thermometer and be sure heat is approx 250-275º. When hot, spray griddle with non-stick spray
- Pour 1/3 measuring cup of pancake batter on hot griddle, forming 5 inch circles. I fit 6 pancakes on the 28″ flat top griddle.
- When edges start to form and bubbles spread across batter after 2-3 min, flip pancakes using thin spatula. They should be golden brown. Cook on other side for 2 minutes until golden brown.
- Remove from griddle and set aside. Do not stack. Lay pancakes in a single layer on a baking sheet or cutting board with parchment sheet on top for remaining layers.
- Serve griddle pancakes with butter and maple syrup or whipped cream & strawberries!

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.
Nah – I just threw them all in the bowl together and they were fine.
I like to cook them between 250-275º griddle temp. Hotter than that and they’re going to burn on the outside.
Feel free to substitute the half and half with cream, milk or more buttermilk. You can make your own buttermilk with 1 cup of milk and 1 tbsp of either white vinegar or lemon juice or sub with 1 cup plain yogurt.
