This rich and decadent One Pot French Onion Pasta is reminiscent of French Onion Soup with caramelized onions in a creamy beefy sauce. The addition of rigatoni pasta and mushrooms makes it a complete meal and one you’ll love!

One Pot French Onion Pasta Ingredients

This one pot dish is so comforting and scrumptious. By adding a few premium ingredients like fresh thyme, white wine, balsamic glaze and gruyere cheese – we take dinner to another level! Here’s what you need:

  • Sweet yellow onions – it’s French Onion Pasta – we need some ONIONS! Be sure to use yellow. You’ll need to thinly slice them – so get the goggles on!
  • Mushrooms – I used baby bella but any mushrooms will work.
  • Fresh thyme – whole sprigs – this is really vital to the flavor of the dish! You can get them in the fresh vegetable area of the store or grow your own!
  • Dry white wine – I’m not a drinker, so I buy a 4-pack of the little bottles of red & white for occasions just like this! If you don’t want to use wine – you can use additional beef broth or chicken broth.
  • Beef broth & Water – this is how we’ll cook the pasta in the one pot! The beef broth adds richness that water can’t do alone.
  • Balsamic glaze – you can make your own but I just bought a small bottle – I don’t use it much but when I need it – it’s convenient!
  • Worcestershire sauce
  • Rigatoni pasta – you can use any shaped pasta but I like something larger to hold up to the hearty taste of the onions! Orecchiette and bow tie are also great choices.
  • Heavy cream
  • Gruyere cheese & Mozzarella cheese – you could also use cheddar or gouda in place of gruyere if needed
  • Seasonings: Salt, Black Pepper, Garlic Cloves
  • Butter & Olive Oil

Recipe Variations

Whether you’re vegetarian or just want more cheese – easy tweaks can make this recipe just what you need.

  • Vegetarian – swap out beef broth for vegetable broth
  • Protein – add diced chicken or steak tips when you’re cooking the mushrooms
  • More Cheese – we do think of French onion soup having a thick layer of cheese on top – you could sprinkle mozzarella on top to make it a little cheesier
  • Spinach – add fresh spinach when you remove from the heat for additional vitamins!

How to make Tik Tok’s French Onion Pasta

This dish went viral on TikTok so we know it’s easy to make – one pot is all you need. You can use a mandolin to speed up the slicing of your onions.

  1. Heat olive oil and the butter in a large skillet with high sides or a large Dutch oven over medium-low heat. Add the onion, pepper and 1 teaspoon of salt. Stir occasionally, until the onion is very soft and golden brown – this will take about 15 to 20 minutes. Caramelizing onions takes time!
  2. Add the mushrooms, thyme (whole sprigs), garlic and balsamic glaze. Sauté until the mushrooms begin to soften, 3-4 minutes. 
  3. Add wine and deglaze the pan by stirring wine into onion mixture and cook until the liquid is almost completely evaporated – which should take about 2 minutes.
  4. Pour in beef broth, water, Worcestershire sauce and remaining salt. Bring to a boil over medium-high heat.
  5. Add the pasta and put on the lid. Lower to medium heat and simmer about 10 to 11 minutes until pasta is al dente. Remove thyme sprigs. 
  6. Remove from heat. Add cream and cheeses and stir and let stand for 3-5 minutes to thicken up. 
  7. Serve with fresh thyme leaves, fresh parsley and grated parmesan cheese

How do you store and reheat leftover french onion pasta?

Store leftovers in an airtight container (I like these glass storage ones) in the refrigerator for up to a week. Reheat in the microwave for 1-2 minutes. 

Can you freeze this dish?

Yes – put in the same storage containers and freeze up to three months.

Can I use more onions? Red or white?

Feel free to use more YELLOW onions – but not red or white!

Ingredients
  

  • 2 tbsp. olive oil
  • 2 tbsp. unsalted butter
  • 3 medium yellow onions cut in half and thinly sliced
  • 2 tsp. Coarse sea salt divided
  • 1/2 tsp. freshly ground black pepper
  • 8 oz. mushrooms sliced
  • 5 fresh thyme whole sprigs
  • 5 garlic cloves minced
  • 1 tbsp balsamic glaze
  • 1 cup dry white wine
  • 4 cup beef broth
  • 2 cup Water
  • 1 tbsp Worcestershire sauce
  • 1 lb rigatoni pasta
  • 1 cup heavy cream
  • 1 cup Gruyere cheese grated
  • 1/2 cup mozzarella cheese grated

Instructions
