This Slow Cooker Sausage and Hash Brown Casserole is cozy comfort food at its cheesiest, with hash brown potatoes, sour cream, cheddar, pepper jack and smoky sliced kielbasa all melted together. Two things to make it easy: you can use frozen hash browns straight from the bag (no thawing needed), and skip browning the sausage since it’s already cooked and just needs to warm through!

Think about your mom’s funeral potatoes recipe – add more cheese and then throw in some smoked sausage! It’s basically Crockpot funeral potatoes with sausage turned into a complete meal.
- Frozen shredded hash browns make this recipe ridiculously easy, and there’s no need to thaw them first. Add them straight from the freezer to the slow cooker. I tested them frozen and they cooked up perfectly tender.
- Smoked Sausage or Kielbasa – Use your favorite fully cooked smoked sausage. There’s no need to brown or cook it first because it’s already cooked and will heat through with the casserole.
- Cream of Mushroom Soup – you could use cream of chicken if you like
- Sour Cream – You could sub out Greek yogurt if you like
- Yellow Onion – you could also use white onion
- Cheddar Cheese & Pepper Jack Cheese – this is flexible – use what you like – mozzarella or colby would be great as well
- Seasonings: Lawrys seasoning salt & Black pepper

- Chef’s Knife – a sharp knife is such an important tool to have when it comes to serving. This is the one that I always go for in the kitchen.
- Silicone Spatula – I have a cup full of silicone spatulas and these are my favorite that would be perfect for a recipe like this one!

Recipe Variations
I love this recipe just the way it is – but you can make some tweaks for your family – whether it’s adding vegetables or change up the smoked sausage!
- Vegetables – there are onions in there but no other veggies in sight. But you can add some! Sliced Mushrooms, diced carrots or diced bell peppers would also be tasty in this casserole. Canned diced tomatoes or fresh chopped tomatoes would also add a nice contrast in flavor!
- More Seasoning – This is fairly simple with just Lawry’s but garlic and onion powder would also be delicious.
- Meat Swap – Smoked Sausage is primarily made from pork – you could switch with turkey sausage or chicken sausage if you like. Or even vegetarian sausages if that’s more your style!

How to Make Sausage and Hash Brown Casserole in the Slow Cooker
This crock pot casserole is so easy – it’s a dump it all together – stir and cook!
- SPRAY your crockpot or slow cooker with non-stick cooking spray.
- POUR cream of mushroom and sour cream into the crockpot and whisk together.
- FOLD in hash browns, 2 3/4 cups of cheese and diced onions.
- FOLD in sausage and seasonings. Sprinkle top with remaining cheese.
- PLACE lid on slow cooker and slow cook on high setting for 2 to 3 hours or on low setting for 4 hours.
- SPOON out and serve with a sprinkle of green onions for crunch!

How to Store & Reheat
- How do you store and reheat leftover cheesy potatoes? Store leftovers in an airtight container (I like these glass ones) in the fridge for 3-4 days. Reheat in the microwave for 1-2 minutes or in the oven for 20 minutes at 350º.
- Freezing: Leftovers from this casserole can also be frozen for up to 3 months. Thaw overnight in the refrigerator before reheating.
