Air Fryer Italian Sausage and Peppers is a super quick weeknight meal that’s ready in just 10 minutes! I like to add onions and peppers when I’m making this too. They all go together and taste great when I make Sausage Sandwiches!
When you’re prepping this meal, be sure to make – because you can turn the leftovers into a delicious pasta dish! I get excited for repurposed leftovers…I can’t help it!
Which onions and peppers do you use for Sausage and Peppers?
You can really choose what you like but my preference is are colored bell peppers – like orange and yellow – I think they’re a little sweeter. You could also use green or even banana peppers if you like a little more spice! I like mixing it up too. With onions, I tend to always use yellow sweet onions like Vidalia unless a recipes specifically calls for red onions.
What can you do with leftover sausage and peppers?
So I’m one person and I don’t need to eat FOUR sausages! So I had leftovers!
I took two sausages and sliced them up with my leftover peppers, onions and mushrooms. In one pot, I cooked up some angel hair pasta (my favorite). In a skillet, I reheated the sausage and peppers and added some jarred marinara I had in the fridge. Once the pasta was done, I drained it and added it to the skillet and topped it with a couple of dollops of ricotta cheese. Voila – NEW MEAL!
You could easily swap out the ricotta with shredded mozzarella or even a sprinkle of Parmesan. I just really like ricotta.
