Taco Bell’s Cheesy Fiesta Potatoes are gone as of today but it doesn’t mean you can’t enjoy them! I love those spicy nuggets covered in cheese and sour cream!
Taco Bell’s Nacho Fries are obviously popular – but apparently they’re so popular they clicked these little guys right off the menu. Lucky for you – they’re easy enough to make at home with just a few ingredients.
How do you make Taco Bell’s Cheesy Fiesta Potatoes?
These little guys are easy for sure! I bought a bag of frozen “home fries” – you’ve got to find the ones that are bigger than hashbrowns but not as big as tater tots. They’re little diced pieces of potato. I tried frying them in the air fryer but they didn’t brown and just sogged – so I made them in a skillet and that worked beter.
While those are heating up – they take about 10 minutes – put your nacho cheese sauce in a microwave safe bowl and heat it up for 1-2 minutes – stirring every 30 seconds. Then – it’s assembly time!
I had a spoonful of the home fries, then I topped them with faijta seasoning. On top of that – topped with a couple spoonfuls of nacho cheese then a dollop of sour cream – that’s it! It really jazzes up a side of potatoes.
Taco Bell is also saying goodbye to the 7 layer burrito and the Nachos Supreme – which I’m really bummed about – that was my go-to order! But I’m sure I’ll find something else to love – or just be motivated to make my own. Nothing good lasts forever – right?

Copycat Taco Bell Cheesy Fiesta Potatoes

Ingredients
- 1 bag home fries
- 2 tbsp Tropical Sazon
- 1 15 oz can of nacho cheese sauce
- 1/2 cup sour cream
Instructions
- Cook home fries to package directions.
- Heat nacho cheese in microwave for 2 minutes, stirring every 30 seconds
- Spoon potatoes in small bowl, top with 2 tbsp each of cheese sauce and sour cream
- Sprinkle with Sazon
