  • Cheesy Goodness! I love the cheese in this casserole! We used Colby Cheese just like Cracker Barrel. You might think since it’s yellow – that it’s like Cheddar cheese but it’s actually sweeter and more like Monterey Jack!

Cracker Barrel Hashbrown Casserole Ingredients

Cheesy Potato Casserole has really simple ingredients – and it’s dump and go – so you can’t screw it up! Here’s what you need:

  • Frozen Hash Browns – because we’re cooking this slowly – no need to thaw them – right from the freezer is fine!
  • Cold Butter – a lot of recipes call for melted butter – I went with COLD so I could grate it and it would be evenly spread in the potatoes. It’s a trick I learned when making biscuits.
  • Cream of Chicken Soup – you could also use cream of mushroom or cream of onion
  • Sour Cream
  • Diced Onion – you can use a yellow or white onion – I like yellow since they are a little sweeter
  • Colby Cheese – similar cheeses would be monterey jack or colby jack
  • Lawry’s Seasoning Salt
  • Black Pepper

Recipe Variations

This is an easy recipe to modify to make it a meal or add things to it! Here are some ideas:

  • Meat – add leftover ham or smoked sausage into the casserole or some par-cooked bacon to make it a meal! You could even nestle seasoned pork chops in the top of the casserole and they’ll “bake” while it cooks!
  • Different Cheeses – colby is a fairly mild and sweet cheese – change it up with monterey jack and colby jack would be most similar.
  • Seasoning – I went with a good mixed seasoning like Lawry’s but if you don’t have that you could use garlic powder, paprika and salt.
  • Veggies – add diced carrots, broccoli or mushrooms to go along with the onion for more vegetables in the casserole

How to make Hashbrown Casserole recipe in a Crock Pot

This is a dump and go – love that!!! I do use a large bowl to mix it all together just because it fills the slow cooker! Here’s how to make it:

  1. Grate butter and cheese – it’s best if they are cold – right out of the fridge. Dice onion in a small dice.
  2. Spray your crockpot or slow cooker with non-stick spray.
  3. In a large bowl, add all ingredients – setting aside 1/4 cup shredded cheese to put on top and stir mixture.
  4. Pour potato mixture into your slow cooker. Sprinkle reserved cheese on top of the casserole.  
  5. Cook on high for 2 to 3 hours or on low for 4 hours.

Tips, Tricks & FAQs

How do you store and reheat leftover hashbrown casserole?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes. 

Can I bake this casserole?

Yes – you can bake dish at 350º for 50 minutes if that’s easier.

Is this casserole gluten-free?

You’ll need to find the gluten-free cream of chicken – but other than that – yes.

Can make this casserole ahead of time?

Yes – you can make up the mixture ahead of time and cover with aluminum foil and put in fridge. Then remove and add to crock pot when ready to cook.

Ingredients
  

  • 32 ounces frozen shredded hash browns
  • 1 stick cold butter grated
  • 10¼ oz condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup onion finely diced
