Parmesan Baked Cod

Parmesan Baked Cod is my favorite fish dish! Light coated with parmesan, garlic and lemon herb – this dish is quickly baked to flaky perfection. This healthy dish is on the table in under 20 minutes!

I jazzed up my baked cod by adding lots of veggies! I laid out trimmed asparagus, fresh spinach and sliced cherry tomatoes. Sprinkled with any bits of remaining parmesan topping and everybody will be begging for more!

What’s in Parmesan Baked Cod?
It’s a simple dish – that you can customize with your favorite seasonings. Here’s what I used:
- 1 lb cod (2 fillets) – I used the Lingcod that came in my Salmon Sitka Shares box!
- 3/4 cup Parmesan cheese grated – you’ll notice – no breadcrumbs – I think the cheese was just right!
- 2 tsp lemon herb seasoning – you could easily swap this with Italian seasoning or whatever you like on your seafood
- 1 tsp garlic minced
- 1 tsp parsley
- 1/2 tsp coarse sea salt
- 1 tbsp olive oil

What’s the best way to bake fish?
- Preheat the oven to 400ºF. Line a rimmed baking sheet with parchment paper.
- In a breading tray, mix together the Parmesan, lemon herb seasoning, garlic, parsley and salt.
- Drizzle the cod with olive oil and then dredge in the cheese mixture, pressing it in lightly with your fingers.
- I decided to add veggies to this by laying out trimmed asparagus, spinach and sliced cherry tomatoes. Sprinkle all of that with olive oil, salt & pepper.
- Transfer fish with cheese topping to the baking sheet on top of the spinach. Top cod with any leftover cheese mixture.
- Bake until the fish is opaque in the thickest part, about 10-15 minutes.
- Small/thin veggies like these cook in the same time!
