Ingredients for Buffalo Chicken Dip
This Buffalo Chicken Dip recipe has pretty simple ingredients. For me – I just have to buy the Rotisserie Chicken and the rest is in the pantry. Here’s what you need:
- 4 cups cooked chicken, roughly chopped
- I used a rotisserie chicken. I peeled the skin off and took all the meat off the bones. Then roughly chopped into bite-sized pieces
- 16 oz Buffalo wing sauce (or a hot sauce like Frank’s) – I like Kroger of Sweet Baby Ray’s Wing Sauce
- 16 oz cream cheese softened, diced – let it sit out on the counter for an hour or so
- 1 cup ranch dressing (or sour cream) – I made ranch from the seasoning mix, mayo & milk for this recipe
- 16 oz cheddar cheese block, grated
- 1/3 cup celery, finely diced
- 4 oz blue cheese crumbles

Recipe Variations
You can tweak the recipe based on what you have – here’s a few easy changes:
- Smoked Chicken – instead of a rotisserie chicken – get more smoky flavor by using smoked chicken like this Beer Can Chicken
- Chicken Breast – you can use 2-3 cans chicken breast or 3-4 chicken breasts (poached & shredded)
- Green Onions – don’t have celery? Chopped green onions work as well for that fresh crunch!
- Spicy – make it spicier by using pepper jack cheese instead of cheddar

How to make Buffalo Chicken Dip on the Traeger
It’s so easy to make – put it all in a bowl and stir it up! Then onto the Traeger!
- Preheat smoker to 300ºF. Spray baking dish or disposable pan with non-stick cooking spray.
- In a large mixing bowl, add shredded chicken, buffalo sauce, cream cheese, ranch dressing, cheddar cheese and half of blue cheese. Stir to combine.
- Pour chicken mixture into pan.
- Place on smoker for 60 minutes. Open the smoker and stir to combine.
- Close the smoker lid and smoke for another 60 minutes.
- Remove from smoker. Top with diced celery and remaining blue cheese.
- Serve with tortilla chips.
