This Spinach Arugula Salad is light, creamy and crunchy with a delicious honey dijon vinaigrette. The spinach and arugula are topped with shallots, cherry tomatoes, creamy goat cheese and pecans!

  • Goat Cheese – I love the creamy texture of goat cheese and it provides a nice contrast to the crunch!
  • Honey Dijon – this vinaigrette is a nice spin on a honey mustard dressing – it’s light and yet still sweet & savory!

Spinach Arugula Salad Ingredients

Salads are fun to put together because just change 2-3 things can give it a completely different flavor! Here’s what you’ll need for this salad:

For the Salad

With the salad and toppings you want different textures – crunchy, creamy and some with a bite!

  • Baby spinach – this is a great base – it’s affordable and has a fairly bland flavor. You could also add in Romaine Lettuce if you like.
  • Arugula – this will provide a peppery bite to the salad – you could use Spring Greens as a substitute as it typically contains spinach and arugula
  • Shallots – these have a slightly sweeter flavor than a regular onion – but it will still have a nice pungent crunch. You could also use red onion if you like more bite!
  • Cherry tomatoes – I love the juiciness of a cherry tomato – you can use a regular tomato but the cherry aren’t as loose as when you dice a regular tomato. You could also add fruit instead of tomatoes – apple slices or pomegranate arils would be delish!
  • Goat cheese – I love the taste of goat cheese – you could also use boursin or an herbed goat cheese. Or – if you’re not a fan – you can use feta cheese – it’s a dryer and saltier cheese but would still be good with the other flavors. Blue cheese would also be good with some creaminess and a lot of bite!
  • Pecans – love the crunch of pecans but you could also use pine nuts, almonds or walnuts

For the Salad Dressing

This is a nice light honey dijon vinaigrette. Instead of vinegar – we’re using lemon juice – but it’s still called a vinaigrette! Homemade Salad Dressing is so delicious!

  • Lemon – fresh lemon is a must for a vinaigrette when it’s the main source of acid. Balsamic vinegar or apple cider vinegar would be good substitutes as well.
  • Dijon mustard – I love the flavor of a Dijon – you could use another style of mustard if you like – but make sure it can handle the other flavors. I wouldn’t recommend yellow mustard though.
  • Garlic Cloves – fresh garlic cloves are best here – so few ingredients – they all need to have a ton of flavor
  • Honey – you could also use brown sugar
  • Extra Virgin Olive Oil, Salt & Black pepper

How to make this Spinach Arugula Salad recipe

This is a nice basic salad with an easy-to-make vinaigrette. It’s a great side dish for any meal or you could easily serve this with grilled chicken, salmon or shrimp for some added protein!

  1. To make the dressing whisk together the lemon, dijon, garlic, honey, olive oil, salt & pepper. You can also add ingredients to a mason jar, top with the lid and shake.
  2. In a large bowl, add the spinach and the arugula. Layer on shallots, tomatoes and dressing. Toss until combined and top with the pecans and goat cheese.

How do you store leftover salad?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for 2-3 days. If you know you’ll have leftovers, only use dressing on the portion that you’ll eat and store the remaining dressing in an air tight container in the refrigerator.

Ingredients
  

Honey Dijon Vinaigrette

Salad

  • 3 cups baby spinach
  • 3 cups arugula
  • 2 shallots thinly sliced
  • 8 oz cherry tomatoes halved
  • 4 oz herbed goat cheese crumbled
  • 1/4 cup pecans roughly chopped

Instructions
 

  • To make the dressing whisk together the lemon, dijon, garlic, honey, olive oil, salt & pepper. You can also add ingredients to a mason jar, top with the lid and shake.
    1 medium lemon, 1 tbsp dijon mustard, 2 garlic clove minced, 1 tbsp honey, 1/3 cup olive oil, 1/2 tsp salt, 1/4 tsp black pepper
  • In a large bowl, add the spinach and the arugula. Layer on shallots, tomatoes and dressing. Toss until combined and top with the pecans and goat cheese.
    3 cups baby spinach, 3 cups arugula, 2 shallots, 8 oz cherry tomatoes, 4 oz herbed goat cheese, 1/4 cup pecans
