🔍 COPYCAT SECRETS UNCOVERED!

Starbucks is one of my favorites to copycat because they list their ingredients! They lead the name with Truffle but – guess what – it’s at the BOTTOM of the ingredients list (which means it’s got the least amount in the bites). But I bit the bullet and bought Truffles on Amazon. That does make the cost go up – but even with the Truffles – these are still 1/3 the price of Starbucks!

Starbucks Truffle Egg Bite Ingredients

Starbucks has a lot of varieties of egg bites from Kale & Mushroom, Bacon & Gruyere, Italian Sausage, Egg White and the Potato Chive – and I’ve got recipes for all of them! Here’s what you’ll need for the Truffle, Mushroom & Brie:

  • Eggs – this recipe makes 12 egg bites and you’ll need 8 full eggs.
    • If you’re looking to lighten this recipe up – you could swap out some egg whites for full eggs – but be sure to double the # of egg whites to equal the full eggs.
  • Cottage Cheese – I would recommend at least using 2% milk cottage cheese but you can also use full fat.
  • Brie Cheese – I used a little less than half a wheel of Brie for this but finely diced it so that we get some of those melty bites in the egg bites. I like to use a Double Creme Brie – it has more cream and a higher butterfat content.
  • Monterey Jack Cheese – this is grated and blended in with the egg mixture for flavor.
  • Truffles & Mushrooms – it’s not easy to find truffles in rural Ohio – so I went to Amazon and found a tiny tiny jar of black truffles for $20. I also know truffles are very rich and I didn’t need much. I used about 7-8 slices of truffle (about 1/3-1/2 jar).
    • For the mushrooms – I just diced up 4 button mushrooms for this part. You just need a couple pieces in each egg bite.
  • Seasonings – parsley, salt, pepper, hot sauce

Cheaper Options for the Truffles

You may not want to shell out the money for actual black truffles – so here are some ideas to making them without the actual truffles:

  • Truffle Oil – DO NOT use truffle OIL as a replacement! Anthony Bourdain famously said “Truffle Oil is not a food.” and I agree. It’s just stinky!
  • Porcini Mushrooms – these have a strong flavor – especially if you buy them dried and rehydrate them in the recipe
  • Truffle Salt – this is a little more readily available and gives some of that flavor – although some of the truffle salts are not made with real truffle.
  • Skip ’em – You can just go without the truffle and use more mushrooms – you’ll miss that truffle flavor – but if mushroom & brie is pretty great together on their own!

How to make Starbucks Egg Bites

Egg bites are easy to make – especially with a good blender or food processor. Don’t skip the water bath step – it really makes a big difference in giving you that creamy richness!

  1. PREHEAT oven to 325º and set a rimmed baking sheet in the oven with enough water to go halfway up the sides of the pan. Spray a muffin pan with nonstick spray.
  2. BLEND cottage cheese, 1 egg, Monterey Jack cheese, truffle slices, hot sauce, parsley, salt & pepper.
  3. WHISK remaining eggs with cottage cheese mixture.
  4. SAUTE mushroom in a small skillet and finely dice brie.
  5. SPLIT mushroom and brie pieces among the 12 muffin cups.
  6. LADLE egg mixture into muffin cups.
  7. PLACE muffin tin into the baking sheet with water and bake for 20-25 minutes.

Tips Tricks & FAQs

Their egg bites are sous vide (not in store) which means cooked sealed in a lower temperature water bath. We can achieve a similar technique by placing the muffin tin in a pan of water.

Store egg bites in an air tight container for 3-5 days in the refrigerator.

Just like Starbucks, in the microwave.

No – as long as you use a nonstick pan and spray it with nonstick spray – these will come right out. I finally had to get a new muffin tin – my old one was sticking way too much!!!

Ingredients
  

  • 8 eggs
  • 1/2 cup cottage cheese
  • 1/4 cup Monterey Jack cheese grated
  • 5-7 slices truffle 10-15 grams
  • 1 tsp hot sauce
  • 1/2 tsp parsley
  • 1/4 tsp sea salt
  • 1/4 tsp pepper
  • 3 oz brie finely diced
  • 4 oz mushroom finely diced
  • non-stick spray

Instructions
 

  • Preheat oven to 325
  • To the blender, add 1 egg, cottage cheese, jack cheese, truffle, hot sauce, parsley, salt & pepper until blended.
    8 eggs, 1/2 cup cottage cheese, 1/4 cup Monterey Jack cheese, 5-7 slices truffle, 1 tsp hot sauce, 1/2 tsp parsley, 1/4 tsp sea salt, 1/4 tsp pepper
  • Then whisk by hand with rest of eggs,
    8 eggs
  • In a small skillet, heat pan and add spray olive oil. Saute mushrooms for 3-5 minutes
    4 oz mushroom
  • Into a nonstick muffin pan, sprayed with non-stick spray, add brie and mushrooms to the tins.
    3 oz brie, non-stick spray
  • Ladle in egg mixture and stir lightly.
  • Place muffin tin in a rimmed baking sheet with 1-2 cups water.
  • Bake 325º for 20-25 minutes. Center of egg bites should register 170-175º
  • Remove from oven and let cool for 5 minutes, then use a spatula, carefully remove them from the muffin tin. Enjoy!
