The Secret to the Texas Roadhouse Caramel
The menu calls it a honey cinnamon caramel. My friend who worked there spilled that it’s basically their famous cinnamon butter plus caramel. So that’s exactly how we made it!
We start with our Copycat Texas Roadhouse Butter (yes, the one you’ve been slathering on rolls), then melt it down with brown sugar and a little more honey until it turns into a rich, buttery, cinnamon-y caramel. When the Queen of Copycat finds a restaurant butter this good, it goes in everything!

Ingredients for Texas Roadhouse Loaded Sweet Potatoes
- Large sweet potatoes: Bigger potatoes mean more room for toppings. Bake time depends on size, so always check with a knife.
- Canola oil: Rubbed on the skin before baking.
- Salted butter: It has to be softened so it stirs smooth with the sugar, honey and cinnamon.
- Powdered sugar, honey and cinnamon: This is the honey cinnamon butter part.
- Brown sugar and more honey: These turn the butter into caramel.
- Mini marshmallows: Half a cup per potato. Yes, really!

How to Make Texas Roadhouse Loaded Sweet Potatoes
- Bake the sweet potatoes. Wash and dry the potatoes, poke a few holes in each one, rub them with oil, and bake on a foil-lined pan at 425 until they’re soft all the way through.
- Stir up the honey cinnamon butter. Mix the softened butter, powdered sugar, honey and cinnamon with a spatula.
- Make the caramel. Melt the butter mixture in a small saucepan over medium low, then stir in the brown sugar and the rest of the honey until it’s combined and thickened.
- Load them up. Slice the potatoes open lengthwise, push them open and spoon in the caramel and marshmallows.
- Broil. A couple of minutes under a low broil until the marshmallows turn golden. Do not walk away!

Tips for the Best Loaded Sweet Potatoes
- Line the pan with foil. Sweet potatoes drip and caramel gets sticky. Foil or parchment paper keeps the cleanup easy.
- Check for doneness with a knife. 45 minutes is a starting point. Big potatoes can take longer (mine took 50 min) – so poke them. If the knife slides right in, they’re ready.
- Watch the broiler like a hawk. Marshmallows go from golden to on fire FAST. Two to three minutes, and stay right there.
- Go heavy on the caramel. The recipe makes extra. We used closer to 3 tablespoons per potato and still had a little left over. Too much caramel is not a real problem.

Ingredients
- 2 large sweet potatoes
- 1 tbsp canola oil
- 4 tbsp SOFTENED salted butter
- 4 tsp powdered sugar
- 1.5 tsp honey
- 1/2 tsp cinnamon
- 1/4 cup brown sugar
- 1 tbsp honey
- 1 cup mini marshmallows
Instructions
- Heat oven to 425.
- Wash sweet potatoes and dry. Poke 4-6 holes in potatoes with paring knife. Rub outside of potatoes with canola oil.2 large sweet potatoes, 1 tbsp canola oil
- Place potatoes on foil lined pan and bake for 45 minutes. Potatoes should be soft when poked with a knife.
- In a mixing bowl, add butter, powdered sugar, honey and cinnamon. Stir together with a spatula until combined.4 tbsp SOFTENED salted butter, 4 tsp powdered sugar, 1.5 tsp honey, 1/2 tsp cinnamon
- After 45 minutes, remove potatoes from oven. Potatoes should be soft when poked with a knife. Timing can vary based on the size of your potatoes. If finished set aside and turn oven to low broil.
- In a small saucepan or skillet, add butter mixture and melt over medium low heat. Add in brown sugar and 1 tbsp honey. Stir until combined and thickened.1/4 cup brown sugar, 1 tbsp honey
- Slice baked sweet potato open lengthwise and push open the potato. Top each potato with 2 tbsp caramel sauce and 1/2 cup mini marshmallows.1 cup mini marshmallows
- Broil for 2-3 minutes until marshmallows start to brown. Watch this very carefully! This goes quickly!
- Remove from oven and serve!
