Stuffed Portobello Recipe Ingredients

Just a few simple ingredients to prepare this recipe in under 5 minutes!

  • Cheeses – ricotta & mozzarella
  • Seasonings – bread crumbs, Italian seasoning, garlic salt, olive oil
    • Feel free to substitute with fresh herbs (basil, oregano) for the Italian seasoning or melted butter for the olive oil
  • Mushrooms – obviously you’ll need Portobello mushrooms
  • Roma Tomato – thinly sliced to top the mushroom for color and flavor

Recipe Variations

Stuffed Mushrooms can be made lots of ways and here are a few variations I like to make:

  • Parmesan Cheese – top your mushrooms after you remove from the air fryer with a sprinkle of Parmesan cheese
  • Larger Batch – if you’re making a larger batch, you should add an egg to help the cheeses stick together
  • Spicy – if you would like a little spice, add in 1/8 tsp red pepper flakes
  • Button Mushrooms – feel free to use this same cheesy stuffing for regular button mushrooms as well
  • Meat & Cheese – Swap out the ricotta with 1/8 lb of raw Italian sausage and 1/4 block of cream cheese for a meat & cheese treat!

How to make Air Fryer Stuffed Mushrooms

These are so simple to make – I buy a couple mushrooms every time I go to the store for a quick light dinner any night!

  1. Lightly scrub mushrooms and pop out the stems and discard.
    • If you push sideways on the base of the stem – it will pop off easily.
  2. In a medium bowl, stir ricotta, mozzarella, bread crumbs, Italian seasoning and garlic salt until well combined. 
  3. Spoon cheese mixture inside mushroom caps so that mushroom is slightly overstuffed. Top with thin slices of Roma tomato.
  4. Place stuffed mushroom in air fryer basket and drizzle olive oil and a sprinkle of coarse sea salt over mushrooms.
  5. Air fry at 320°F for 9 minutes. 
  6. Remove mushroom from air fryer and serve with fresh basil.

Tips, Tricks & FAQs

Should you remove the gills from a portobello mushroom?

It’s up to you – I never remove them but you can if you like.

Do you peel portobello mushrooms before stuffing?

No – it’s not necessary. Just lightly wash them with a mushroom brush or a damp paper towel.

Can you make stuffed mushrooms ahead of time?

Yes! Prepare them up to the point where you would drizzle on olive oil and put in the air fryer basket. Then put in an air tight container and refrigerate until ready to cook.

Can you bake these in the oven?

Yes – bake at 350º for 20 minutes in the oven.

How do you store and reheat leftover stuffed mushrooms?

Store leftovers in an airtight container (I like these glass storage ones) in the refrigerator for up to a week. Reheat in the microwave for 1-2 minutes or in the air fryer at 300º for 4-5 minutes.

  • Lightly scrub mushrooms and pop out the stems and discard.
    2 portobello mushrooms
  • In a medium bowl, stir ricotta, mozzarella, bread crumbs, Italian seasoning and garlic salt until well combined. 
    2 portobello mushrooms, 1/3 cup ricotta cheese, 1/3 cup mozzarella cheese, 2 tbsp bread crumbs, 1/4 tsp Italian seasoning, 1/4 tsp garlic salt
  • Spoon cheese mixture inside mushroom caps so that mushroom is slightly overstuffed. Top with thin slices of Roma tomato.

  • Place stuffed mushroom in air fryer basket and drizzle olive oil and a sprinkle of coarse sea salt over mushrooms.
    1/2 tsp olive oil
  • Air fry at 320°F for 9 minutes. 
  • Remove mushroom from air fryer and serve with fresh basil.
