I love my breaded veggies in the air fryer but sometimes a simple EVOO + seasoning is best! These Air Fryer Zucchini Chips are just the side dish for that treatment. Zucchini doesn’t have a ton of flavor on it’s own – so just adding a bit of EVOO and garlic herb makes it so delish!
This is a great side dish for any chicken, steak or seafood dish! I love that some of the “chips” turn out crispy while others are softer – so good! It’s sort of like french fries – some are super crunchy and others have a little bend to them – and yes – I like them all!
What are Zucchini Chips?
Little discs of green zucchini and/or yellow squash sliced thin and then fried – by me – always in an air fryer! You could bread them – but I like these with just a little olive oil and seasoning – then dipped in my Jalapeno Ranch of course!
Why are my Zucchini Chips soggy?
Well – zucchini has a high water content – so you need to draw some of that water out. The easiest way to do that is to slice your zucchini first – sprinkle with a pinch or two of salt – and let sit for 5 minutes. Then spread the zucchini chips on paper towels and soak up the excess water. You’ll be SHOCKED at how much it pulls out!!!! Now you’re ready to fry them in the AF!
Can you make Zucchini Chips in an air fryer?
Of course!!!! You can also bread your zucchini – I like doing that – but like I said – sometimes – naked is best! (#thatswhatshesaid) Zucchini chips with no breading are so simple so let’s dive in!
First – wash your zucchini really well – I think these need the skin ON – but you want to get off that waxy film! I sliced my first batch with a mandolin and they were a little too thin – so then I just used a Chef’s knife to make them a little thicker and they turned out better.
After getting the water out of them (see above) – then sprinkle with olive oil and your favorite seasoning – I love lemon/garlic/herb seasoning – and then into the air fryer they go! You’ll want to air fry them at 350 for 10 minutes.
What to serve with Air Fryer Zucchini Chips?
Air Fryer Zucchini Chips
- 2 zucchini small, sliced 1/8-1/4" thick
- 1/2 tsp coarse sea salt
- 2 tsp olive oil
- 1-2 tsp garlic & herb seasoning
- Cut zucchini into a little less than 1/4-inch thick slices
- Place zucchini in a bowl with salt and sit for 6 minutes.
- Pat zucchini slices with a paper towel and then put back in the bowl and toss with olive oil and a sprinkle of garlic herb seasoning
- Place the zucchini slices in the air fryer in a single layer and cook
- Air fry at 350 for 5 min. Flip and air fry 6 min more. (They may blow around a bit on their own – just lay them back out)
