Blackstone Griddle Scrambled Eggs

Griddle Scrambled Eggs are my new favorite way to make this classic dish! The Blackstone Flat Top is so easy to use and you can make a bigger batch of eggs. Plus there’s enough room to add hash browns, sausage and more to the griddle.

What You Will ❤️ About Scrambled Eggs on the Griddle

  • Quick! Scrambled Eggs are tricky – don’t cook them too fast or they’ll be flat and browned – yuck!
  • Big Batch! Because you’ve got the whole griddle top – you can make a big batch of scrambled eggs – or customize everybody’s breakfast!
  • Outdoor Cooking! Get outside and take in some fresh air while you’re making breakfast. It’s especially nice when you add bacon – no smoke in your house!

Ingredients for Scrambled Eggs on the Griddle

The ingredients needed for scrambled eggs on the griddle are the same as in the house – and there’s always some discussion about it – but I’m a fan of using milk/cream in the egg mixture! Here’s what you’ll need:

  • 6 eggs
  • 1/4 cup half and half – you can also use cream or milk if that’s what you have!
  • 1/4 tsp coarse sea salt
  • 1/8 tsp cracked black pepper
  • 2 tbsp salted butter – you can also use your squirt bottle with vegetable oils or canola oil

Ways to Customize Scrambled Eggs

Scrambled Eggs are pretty great on their own – but – take a note from Waffle House and add stuff to them! Here are a few ideas:

  • Seasoning! I love Sazon Tropical – it adds a ton of flavor to any dish but especially fried or scrambled eggs.
  • Cheese! Add cheese at the very end of the process. Shut the burners off and sprinkle on grated cheddar cheese – then cover with a metal bowl so the heat & steam will melt the cheese.
  • Veggies! Dice and saute onion and mushroom on the griddle while the eggs are cooking. (they make take a few min longer)

Tools needed for Griddle Scrambled Eggs

You obviously need a bowl, whisk, etc – but here are some specific griddle tools that come in handy!

  • Silicone Ring – while not completely necessary it really helps! The eggs are going to and this holds them in a bit.
  • Silicone Spatula – you can use any heat-resistant silicone spatula but I love the ones from William Sonoma – they have fun designs. These silicone spatulas are more gentle on the eggs.
  • Metal Spatulas – for this recipe I just used them to block the drain. But this griddle kit also comes with 2 squirt bottles which you need for seasoning & cleaning (one for water, one for oil).
  • Thermometer Gun – this is a big help for making sure you’re not too hot or too cold when you put your eggs on. You want it a little hotter to melt the butter but then lower to cook the eggs!

How to make Scrambled Eggs on a Flat Top Griddle

Cooking eggs is actually more difficult than you think. It took me years to make the perfect scrambled and fried eggs! And – to be honest – I had to make these a couple times to learn the tricks of the Blackstone!

  1. In a bowl, crack eggs and add half and half, salt & pepper. Whisk until yolks are broken and everything is fully incorporated. Whisking helps add air into the eggs to keep them light.
  2. Preheat Blackstone on Medium Heat
  3. Add butter onto the griddle cooking surface. Use your spatula to spread around butter and keep it out of the drain.

4. If you have a InstantPot – take out the silicone ring from the lid (or buy an extra) – it’s a great tool to use here!!!!

5. Turn dial down to Medium-Low heat and pour on egg mixture. (Pour into silicone ring if you have one!!) Keep large metal spatula on its side at the top of the grill to block the grease trap. The tilt of the griddle will pull the eggs out the grease trap – so block this area with your metal spatula or you’ll lose your eggs! I did it both ways and the ring made it a LOT easier!!!!

6. Once eggs start to cook after a minute or so, start using a heat-resistant silicone spatula to pull eggs from the edge toward the center and start slowly folding the eggs over – like you would scramble eggs on the stove. Keep the heat low and go all the way around the edges – using the spatula to pull the egg in toward the center.

7. Continue pushing the egg in when cooked and slowly moving around until all of the egg is cooked but still wet. The eggs will keep cooking once removed – so take them off a little underdone so they’re perfect when served!

Tips, Tricks & FAQs

How do you store and reheat leftover scrambled eggs?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the microwave for 45-60 seconds for individual portions. 

How do I get fluffy eggs? Mine are always flat and brown on the griddle!

First – Make sure your heat is low! Second – push and pull the eggs as they cook with a silicone spatula vs chopping or stirring them with the metal spatula. Chopping will deflate and flatten your eggs. 

What temperature should my grill be for scrambled eggs?

Keep the temp low – it should be approx 250-275º. You can use a thermometer gun to check the temp. They’re less than $20. 

Can I use a pan to cook scrambled eggs on the griddle?

Yes definitely – you can also put a frying pan, skillet or disposable pan on top of the Blackstone and cook as you would on your stove top.
