What You Will ❤️ About Blackstone Pizza
- Crunchy Crust! This was the crunchiest crust I’ve ever had and I made it myself on the flat top grill!
- Fast! Like everything on the Blackstone – it comes together quickly!
- Customize – make whatever kind of pizza you like – with whatever crust you like!

Blackstone Pizza Ingredients
Hey – even a bad pizza is a good pizza! I went with simple toppings just to get the hang of making pizza on the Blackstone. Here’s what you need:
- Pizza crust dough – you can make dough, use frozen or canned dough or even a pre-cooked crust (ala Boboli). Check the FAQ section for the difference in cooking instructions.
- Pizza sauce – I realized I have 3 jars in my cupboard – so I used one of those!
- Shredded mozzarella cheese – Be sure to shred your own cheese!!!! The bagged pre-shredded doesn’t melt the same and we need MELTY!
- Pepperoni – I sauteed this on the Blackstone for a few minutes. If you’re using raw sausage – you’ll need longer to cook but can still do it right on the BS!
- Mushroom – most veggies will need a few minutes to saute as well. You do it while the crust is heating up!

Recipe Variations
We all have our favorite pizza toppings – here are some tips for cooking different meats & veggies to have them ready for your pizza.
- Meats – if you’re going to use raw meat like sausage – you’ll want to precook it on the Blackstone. It will take at least as much time as the crust – if not a little longer.
- Veggies – for most veggies (onions, peppers, mushrooms) – you’ll want to precook them on the Blackstone as well. They should cook in the same amount of time as the crust.
- Cheese – Because you’re going to need to cover the pizza for melting – you’ll want to use cheese that YOU GRATE vs. pre-shredded. It melts better!

How to make Blackstone Griddle Pizza
So here’s the thing about making a pizza on the Blackstone – it’s open air – which is not conducive to melting cheese. But it can still be done. You’re fighting melting the cheese but not getting the crust too browned. Here’s how to make pizza:
- Preheat your griddle over medium low heat.
- Spray cooking spray or oil on your griddle – you don’t need much.
- With canned dough, open and lay it out onto your greased, preheated griddle surface.
- Cook on one side until golden brown – about 3-4 minutes.
- While dough is browning, add pepperoni and mushrooms on other side of griddle. These will saute while crust is cooking.
- Feel free to sprinkle on some Italian seasoning too!
- Flip dough and add sauce and half cheese. Place dome over crust to help cheese melt. Cook pizza for about 2 minutes.
- Remove dome and add pepperoni and mushrooms to pizza. Replace dome to melt cheese. Turn heat to low or turn off.
- Remove pizza from griddle and slice with pizza cutter. Serve while hot!

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the air fryer at 250º for 3-4 minutes.
If using pre-cooked dough, no need to oil griddle. Just need to heat one side for 2 minutes to warm it. Then flip and add toppings.
If using fresh dough (not canned) – roll out into shape before placing on griddle. Using a fork poke a few holes to keep it from bubbling. Then flip and proceed like the recipe does for the canned dough.
If you have a lid, just shut the lid vs. using a dome to trap heat and melt cheese.
If crust is getting too brown on bottom, you can put it on a cooling rack to move it off the surface. Then replace dome to trap heat and melt cheese.
