Blackstone Tortellini is such a fun dinner that feeds a crowd! Loaded up with your favorite cheesy stuffed pasta and mixed in with smoked sausage, veggies & cheese! This is a meal you’ll make over and over!

- Favorite So Far – I’ve made a lot of recipes on my Blackstone – but I can say 100% this is my favorite so far! It’s all my favorite flavors in one dish! My taste buds were exploding!
- Mix It Up – I love this dish because it’s sort of add what you want! Like mushrooms? Do it! Like zucchini – throw it in!
- So Easy! Every time I use the Blackstone – I’m amazed by how easy and quick the meals are! It makes it hard to shoot photos & video – because it’s done so quickly!
- No Pans!!!! Man – the Blackstone finishes up and you have no pans to clean! Love that!

Ingredients for Blackstone Tortellini
Ok – this is where you can have fun – because I chose to go a sort of Caprese with Meat version – but you can change up these ingredients to what you like! Here are the simple ingredients I chose:
- Kielbasa or Smoked Sausage – you can swap your protein with ground sausage or even grilled chicken
- Mushrooms – I used button but use what you like!
- Fresh Spinach – be sure to RINSE your spinach very well if you buy the fresh bunch vs the packaged fresh
- Cherry tomatoes – use any color or size you like and halve them
- Tortellini – I used refrigerated Rana brand cheese tortellini but you can also use thawed tortellini (from frozen)
- Creamy Italian dressing – this was my choice but regular Italian would work as well – or a balsamic!
- Fresh mozzarella – I love the cheese pull this adds into the dish
- Fresh basil leaves – I love my Aerogarden and have fresh herbs all year long!
- OPTIONAL SPICES – the sausage and dressing have lots of seasonings but you could easily add salt, pepper & garlic powder to taste

Recipe Variations
Blackstone Tortellini is a fun dish to make because you can change 1-2 ingredients and make a whole new dish! Here are some ideas:
- Spaghetti – some folks use the tortellini but add crumbled Italian sausage and pasta sauce for a more “spaghetti” dinner feel!
- Cajun – go with bell peppers & yellow onions and then use Andouille sausage with some Cajun seasoning
- Chicken Alfredo – grill chicken breasts and add broccoli & alfredo with your tortellini
- Chicken Caesar – grill chicken and add spinach and Caesar dressing

How to make Tortellini with Sausage & Veggies on the Blackstone
This is such a simple recipe – and it’s perfect for the Blackstone because you can use half for the pasta and half for the meat & veggies. Here’s how to do it:
- Preheat your Blackstone to medium heat (about 350-375º). Lightly oil your griddle top.
- When griddle is hot, place the kielbasa and mushrooms on one side of the griddle.
- On the other side, arrange the tortellini. Place them close enough together that they can be covered by a dome. Squirt water onto the tortellini and cover the pasta with a dome.
- Cook for 4 minutes. Stir the sausage & mushrooms. Uncover the pasta, toss lightly and add another squirt of water. Feel free to grab a bite of the tortellini to be sure the pasta is the texture you like!
- Add spinach and tomatoes to the sausage & mushrooms. Cook for another 2 to 4 minutes, until the pasta is lightly browned and the vegetables are tender.
- Remove the dome and mix pasta into the sausage mixture. Add in mozzarella and Italian dressing and toss to combine.
- Transfer to a bowl and Top with fresh basil and parmesan cheese.

- 14 oz Kielbasa sliced
- 8 oz Mushrooms sliced

- 10 oz cherry tomatoes halved
- 3/4 cup creamy Italian dressing
- 8 ounces fresh mozzarella diced
- Fresh basil leaves chiffonade (thinly sliced)
