This easy Cheese and Ham Frittata is my favorite dish for brunch. Loaded with Ham & Colby Jack cheese – it’s great for holiday leftovers or when you’ve got family over!

- Brunch! Frittata is a perfect brunch recipe because it’s got the eggs and the meat – and it goes with lots of other breakfast food – like pancakes!

Ham & Cheese Frittata Recipe Ingredients
Super simple ingredients in this Ham & Cheese Frittata. I always like to start with something basic – then get crazy as I make it more often. Get the basics down first – here’s what you need:
- Eggs – I’ve done taste tests – eggs are eggs – I don’t spend money for fancy ones.
- Heavy Cream – you could use half and half if you like
- Salt & Black Pepper – go light on the salt as the ham is salty
- Colby Jack Cheese – you can use any cheese that you have or love!
- Ham – Great use of leftover ham from Christmas or Easter!
- Butter – I always use salted but unsalted is good too because the ham is salty

Recipe Variations
This is a pretty basic frittata so feel free to venture out and try adding more ingredients! Here are some ideas:
- Vegetables – I love veggies and was dying to add mushrooms & spinach to this one – but I kept it simple. Other good veg to add would be zucchini, broccoli and onion. You can even make vegetarian frittatas like this spinach, tomato & feta!
- Swap Cheese – Swiss Cheese or Cheddar Cheese are great too but you could also get fancy with Gruyere cheese! And top with a sprinkle of Parmesan cheese when you serve.
- Add a crust – Now a frittata is a quiche with no crust – but if you like a crust – pour it in a pie shell and bake!
- Switch the Protein – swap the ham for bacon or browned sausage

How to make a this Easy Frittata Recipe
With a quiche – you just pour and bake. With a frittata you want to cook the eggs a bit – but the key to light and fluffy frittatas (and scrambled eggs) is low heat and to PULL the eggs and not STIR them. Here’s the simple instructions:
- Preheat oven to 350°F.
- Whisk the eggs, heavy whipping cream, salt, and pepper together in a medium bowl. Set aside.
- Melt the butter in an oven-safe skillet or a cast iron skillet over medium-high heat.
- Turn heat down to medium heat (or even better medium low) and Carefully pour the egg mixture over the top of the melted butter. Cook 1-2 minutes or just until you can see the frittata starting to set on the edges. Pull the edge of the frittata away from the pan to allow some of the uncooked egg to run underneath.
- Sprinkle the diced ham and cheese over the top of the frittata.
- Transfer the frittata to the oven and bake another 12-15 minutes, or until the center is just slightly jiggly. It will set more once it begins cooling.
- Once slightly cooled, cut into 8 slices. Garnish with fresh parsley, spring onions, scallions or chives, if desired.
