Chicken, Sausage and Shrimp Pasta is a Cajun pasta-lovers dream! Loads of perfectly cooked chicken, andouille sausage and large shrimp coated with a chunky creamy sauce and peppers, onions and mushrooms. Best part of making it at home is you can make it as spicy as you like!

  • One Pot Dish – ok like most pasta dishes – it’s technically 2 because you have to cook the pasta first – but after that is cooked everything is done in one pot! And you could use the pasta pot if you like!

Ingredients for Chicken, Sausage & Shrimp Pasta

We’ve got a bit of a list here – but they’re simple ingredients and we just keep grabbing more because they make it even better! Here’s what you’ll need:

  • Pasta – usually I use penne – use something that has ridges and holes to capture the sauce and stand up to the proteins
  • Shrimp – Always get raw, peeled, deveined – I like tail removed because it’s easier to eat
  • Chicken breast – You could also use chicken thigh
  • Andouille sausage – You could also use smoked sausage but the taste of andouille is where it’s at!
  • Cajun seasoning – my favorite is Slap Ya Mama – but use what you like or have. It’s usually a blend of black pepper, white pepper, cayenne pepper, onion powder, garlic powder, and paprika.
  • Yellow onion – you could also use white onion
  • Bell pepper – any color pepper is fine
  • Mushrooms – any type of mushroom is fine but I just used button
  • Garlic – fresh garlic is great but jarlic is fine as well
  • Tomato sauce – just a small can will add a bit of acidity and color to the sauce
  • Chicken broth – this will loosen the cheese so it thins out to make a sauce
  • Half and half – you could use milk or heavy cream if that’s what you have
  • Butter – salted butter is great for this recipe
  • Parmesan cheese – I went with the pre-cut shreds for this but you can also use fresh grated as well. I would avoid the green jar of grated since it’s a feature in this recipe.
  • Green onions – chives or parsley works for garnish as well – but green onions add a nice crunch

Recipe Variations

  • Proteins – you can change up the proteins based on what you have or like – leave one out – double up on sausage – use chicken thighs – so many options!
  • More Veggies – celery would go well with the onion and mushrooms but you could also add sauteed broccoli or even chunks of tomatoes
  • Pasta – change up the pasta because you really can’t go wrong here!
  • Cheese – I might even add ricotta cheese if I make it again! More creaminess!

How to make Chicken, Sausage & Shrimp Pasta

The biggest key to this creamy Cajun pasta dish is cooking your proteins just a little UNDER cooked – because as they rest and combine – they’ll continue cooking. Nothing worse than rubbery shrimp or dry chicken! So watch them closely!

  1. Bring a large pot of water that has had salt added to a boil. Add pasta and cook to al dente according to package instructions.
  2. Remove pasta from water and drain. Set aside.
  3. While your pasta is cooking, in a bowl, toss shrimp with 1 tsp cajun seasoning and make sure it is well coated.
  4. Heat a LARGE skillet over medium-high heat and pour olive oil in pan.
  5. Add shrimp and cook for about 2 minutes. Turn shrimp and cook another minute, or until pink.
  6. Remove shrimp from pan to a plate, set aside.
  7. In a bowl, toss chicken cubes with 1 tsp cajun seasoning 
  8. Add 1-2 tbsp olive oil to pan and add chicken and sausage. Cook chicken & sausage until heated through, about 3-5 minutes. Check chicken with meat thermometer to be sure it’s 150º (it will finishing cooking as you assemble the dish). Add to plate with shrimp and set aside.
  9. In the same pan, with existing oil – add onion, green pepper, mushrooms and cajun seasoning. Cook until the veggies are soft, about 3-5 minutes.
  10. Add minced garlic and cook and stir about 30 seconds.
  11. Add butter and allow to melt. Then add tomato sauce, chicken broth & half and half. Bring to a simmer for about 5 min. 
  12. Add in Parmesan and stir. Add in cooked pasta, shrimp, chicken and sausage.
  13. Toss all ingredients together. Top with green onions and serve with garlic bread

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.

Ingredients
  

  • 2 cups uncooked pasta like penne pasta
  • 1/2 lb chicken breast or thigh cut into 1” pieces
  • 1/2 lb raw shrimp peeled, deveined, tail removed
  • 3 tbsp Slap Ya Mama cajun seasoning divided
  • 1/4 cup olive oil divided
  • 13 oz andouille sausage sliced
  • 1/2 yellow onion diced
  • 1/2 bell pepper diced 1" chunks
  • 8 oz mushrooms sliced
  • 3 tbsp butter
  • 2 cloves garlic minced
  • 8 oz tomato sauce
  • 1/2 cup chicken broth
  • 2/3 cup half and half
  • 3/4 cup parmesan cheese grated
  • 2-3 green onions diced

Instructions
