Blueberry clafoutis is a classic French dessert made with fresh blueberries baked in a thick, custard-like batter. It has a texture somewhere between a flan and a Dutch baby pancake and is typically served warm with powdered sugar.

I have to be honest – when I initially looked into making this I thought it was more of a cake! But once I got everything together – I quickly realized it’s similar to a batter for pancakes but with more eggs – so we’re going custard vs. cake! I researched a bunch of recipes and then put together my own special version! You’ll find the full list of ingredients in the recipe card but here’s what you’ll need:

  • Blueberries – fresh blueberries work great here but you can also use frozen. I used the colossal blueberries and they worked great!
  • Sugar – plain white sugar is fine for this
  • Lemon – originally I was just going to use the zest but then I added a little juice as well for a little more flavor
  • Half & Half – gives the custard a rich texture without being too heavy
    • you can substitute with a combination of cream and 2% milk or whole milk
  • Eggs – the key to creating that signature custard consistency
  • All Purpose Flour – just enough to give structure while keeping it light
  • Vanilla – I got some from Mexico when I was on a cruise and I love it! I would recommend at least using a vanilla vs vanilla extract but use what you have.
  • Salt – just a pinch of coarse sea salt (do people still use fine table salt?)

How to Make EASY Blueberry Clafoutis

I’ve made blueberry cobbler, blueberry cornbread and even blueberry scones – this clafoutis recipe is by far the easiest to make! I’ll definitely be making it again! I had this whole thing together and in the oven in less than 10 minutes! Here’s what you’ll need to do:

  1. PREP – Preheat oven to 425ºF. Generously butter a cake pan.
    • Use butter not non-stick spray in this instance. Just open a stick of butter and rub it all over the inside of the pan.
  2. TOSS – In a medium bowl, toss blueberries with sugar, juice from half lemon and lemon zest. Pour blueberries into the bottom of the pan.
  3. BLEND – In a blender, add half & half, eggs, sugar, flour, vanilla and salt. Blend until batter is smooth. Pour batter mixture over blueberries and gently tap pan on counter to remove air bubbles.
    • You could also whisk the ingredients together or use a hand blender.
  4. BAKE – Bake in the preheated oven until center is set, 30 minutes. Check the center with a toothpick – it should come out clean. The top should be slightly golden brown. Cool 10-15 minutes until clafoutis deflates slightly and is just warm.
  5. SERVE – Dust with powdered sugar and serve warm. (I love this powdered sugar shaker – that way I’m always ready to dust!)

Tips Tricks & FAQs

Yes – blueberries are pretty traditional but blackberries are also used often! Raspberries or peaches would be great as well!

Store individual slices in an airtight container – you can slice it up if you like – and refrigerate for up to 5 days. If you have half or more – cover with plastic wrap – and pat down to the top of the clafoutis so it doesn’t dry out.

Reheat slices in the microwave for 20 seconds and sprinkle with powdered sugar.

  • 1 tbsp white sugar
  • 1 lemon zested & juiced
  • 1 ¼ cups half and half
  • 3 large eggs
