Healthy Fajita Chicken Pasta
Fajita Chicken Pasta is a creamy, flavor-packed dinner loaded with juicy chicken, peppers and onions. This easy chicken fajita pasta recipe combines all the bold flavors of fajitas with a rich, creamy sauce and tender pasta. It’s a healthier pasta dinner made with protein pasta and Greek yogurt but still tastes indulgent and satisfying. It’s like chicken fajitas and pasta had a baby!

Fajita Chicken Pasta Ingredients
Grab some chicken, peppers and onions and let’s get started making this crowd-pleasing Chicken Fajita Pasta casserole! Plus we’re adding the uncooked pasta to the casserole so no pot – no water to boil!
- Chicken – boneless, skinless chicken breast, diced into bite-sized pieces
- Veggies – yellow onion, bell peppers (use different colors), canned diced tomatoes (I like fire roasted)
- Fajita Seasoning Packet – you can also use taco seasoning in a pinch
- I’ve started using Cholula brand and it has a KICK!
- Pasta – there’s a lot of noodle shapes that work well for this: rotini, ziti, penne pasta – use whatever is in your pantry
- I’m trying to get more Protein into my diet and have been using Pete’s Protein Pasta and like it a lot!
- Dairy – low fat cream cheese & nonfat Greek yogurt, pepper Jack cheese
- You can use full fat cream cheese it will just not be quite as healthy.
- You can use sour cream instead of yogurt but you won’t taste the difference and yogurt is so much healthier!
- Use whatever cheese you like – pepper jack will add a little spice but colby jack would be a little more mild – or you could use mozzarella for more creamy texture
- Seasonings – minced garlic, coarse sea salt, black pepper
- Liquids – olive oil, water (you could use chicken broth if you had a little extra)

Is Fajita Chicken Pasta Healthy?
This version of fajita chicken pasta is a healthier twist on a classic comfort dish. It uses lean chicken breast, plenty of vegetables, nonfat Greek yogurt and protein pasta to keep it lighter while still being creamy and satisfying. We’re also going light on the cheese – just enough to have a melty topping!
It’s indulgent but still healthy – just like my Healthy Tater Tot Casserole!

Quick & Easy Variations
This easy pasta dish is simple to prepare but you can swap out a few ingredients and have a whole new dish! Here are a few ideas:
- Frozen Peppers & Onions – you could use frozen peppers and onions instead of fresh and then you can skip the saute step.
- Low Carb – skip the pasta and the water and have a low-carb dinner. You could serve over cauliflower rice.
- More Veggies – you can always add more veggies to a dish! Mushrooms would be delicious in this pasta but you could also get a little wild and add broccoli (not very fajita-y but so good!).
- Swap the Protein – if you’re bored with chicken, try sliced steak or even diced pork chops or boneless pork ribs. (Like these Steak Fajitas)

How to Make Fajita Chicken Pasta
This Chicken Fajita Pasta recipe is so easy to make and full of flavor! Start this healthy family dinner by sauteeing a few veggies and then put it all together in a baking dish and you’re done! Full instructions and amounts in the recipe card below.
- SLICE chicken, onion and peppers into bite-sized pieces.
- SAUTE – In a large skillet, over medium high heat, add 1 tbsp olive oil. When hot, add peppers, onions, garlic, salt & pepper and sauté for 3-4 minutes until they start to soften.
- MIX – Spray a 9×13 pan with nonstick coating and add pasta, chicken, peppers & onions, cream cheese, Greek yogurt, fajita seasoning, tomatoes and water. Stir everything really well and smooth out so pasta is in the liquid as much as possible.
- SPRINKLE – Sprinkle the pepper jack evenly over the top.
- BAKE – Cover with foil and bake in 375º oven for 45 minutes.
- REST – Remove from the oven and let it rest for 5 to 10 minutes so the sauce thickens and the pasta soaks everything up.
- SERVE – Plate up a big scoop and top with sour cream, cilantro and a squeeze of lime! Turn this into a meal and add my Roadhouse Side Salad and some Cheesy Breadsticks!

- 1 yellow onion roughly chopped
- 2 bell peppers roughly chopped
- 1 tsp minced garlic
- 1 tsp coarse sea Salt
- 1/2 tsp Black Pepper
- 1 tbsp olive oil
- 8 oz dry pasta
- 4 oz low-fat cream cheese
- 4 oz nonfat greek yogurt
- 1 packet fajita seasoning or taco seasoning
- 14 oz diced tomatoes
- 1/4 cup water
- 3/4 cup pepper jack cheese grated
Instructions
- Preheat the oven to 375º and Spray a 9×13 pan with nonstick spray.

- To your prepared 9×13 pan, add pasta, chicken, peppers & onions, cream cheese, Greek yogurt, fajita seasoning, tomatoes and water. Mix everything really well so it’s evenly coated.8 oz dry pasta, 4 oz low-fat cream cheese, 4 oz nonfat greek yogurt, 1 packet fajita seasoning, 14 oz diced tomatoes, 1/4 cup water
- Sprinkle the pepper jack evenly over the top.3/4 cup pepper jack cheese
- Cover with foil and bake for 45 minutes.
