This Curly’s® BBQ Pulled Pork Omelette is a new favorite breakfast recipe in our house! Meaty, saucy, spicy- so much deliciousness! And if you’ve never made an omelette – no worries – I can walk you through it! So easy!
Jump to RecipeWe love pulled pork and make so many dishes with it – especially Curly’s. I love that it’s precooked but it’s got all the flavor like I spent all day cooking it on my smoker! There are so many versatile ways to use pulled pork – even when you have just a bit left. This omelette is a great solution! All you do is just add eggs! Then boomio – you have a delicious breakfast (or brunch).
How do you make an omelette?
Making an omelette is shockingly easy – I like a thinner omelette that focuses on the filling. I’m trying to keep things on the lighter side since I’m on Weight Watchers – so here’s my egg mix to make two omelettes (they’re big!)
- Heat water in large skillet over MED-HIGH heat. “Saute” onion and bell pepper, until soft and spoon into a bowl.
- Lower heat and place Curly’s Pulled Pork in skillet and heat for 1 min
- Set meat aside with onions & peppers and clean out skillet.
- Beat together eggs, egg whites, skim milk, salt & pepper until frothy.
- Add 2 tbsp of butter to skillet and heat over MED-LOW. Pour egg mixture and let it sit for a minute to start to cook
- Then, with a rubber spatula, pull the sides in towards the middle, swirling the pan slightly so the runny egg mixture on top hits the pan and cooks. Don’t scramble them – just pull the egg in – and let it set up. Cook about 2 minutes, until eggs are just slightly shiny on top. (see my pic above!)
- Add pulled pork, peppers and onion to center of the omelet.
- Carefully lift up the edge of the omelet and check to see if the eggs are lightly golden on the bottom. Once they are, gently fold each side over the filling.
- Carefully slide omelette onto plate.
- Top with diced jalapeños, nonfat Greek Yogurt and a sprinkle of Monterrey Jack cheese
When do you fold an omelette?
You’ll want to add your filling and fold the omelette when the bottom of the omelette starts to brown slightly. The up-side of the omelette will still seem a little wet – but it’s a thin omelette – so it will be cooked through.
How long can you keep an omelette in the fridge?
You can keep an omelette for 3-4 days after cooking. Be sure it’s in an air tight container – even a ziplock style bag works!
What’s the best way to reheat an omelette?
You can reheat a number of ways – in the microwave, oven, skillet or even air fryer. I feel like the microwave is the most efficient – it’s quick and easy. Just lay a damp paper towel over the omelette and heat for 45-60 seconds – depending on size of omelette.

All the delicious Curly’s products – pulled pork with and without sauce as well as ribs – are in the refrigerated meat section of your grocery store! I’m a big fan of all three – the sauceless might be my favorite because you can make it fit whatever recipe you’re making!
What can you do with leftover pulled pork?
Pulled Pork Omelette
Ingredients
- 1/8 cup onion small dice
- 1/8 cup green pepper small dice
- 1 cup Curly's BBQ Pulled Pork with sauce
- 2 eggs
- 4 egg whites
- 2 tbsp skim milk
- salt
- pepper
- 5-6 pickled jalapeno slices
- 1/8 cup Monterrey Jack cheese or your favorite cheese
- 2 tsp Nonfat Greek yogurt or sour cream
Instructions
- Heat 3 tbsp water in large skillet over MED-HIGH heat. Add onion and bell pepper, cooking about 3 minutes, until soft. Spoon onion & pepper into a bowl.
- Lower heat and place Curly’s Pulled Pork in skillet and heat for 1 min
- Set meat aside with onions & peppers and wipe out skillet.
- Mix together eggs, egg whites, skim milk, salt & pepper. Beat with whisk until blended and a little frothy.
- Add 2 tbsp of butter to skillet and heat over MED-LOW. Add beaten egg mixture and let the eggs start to set up. Then, with a rubber spatula, pull the sides in towards the middle, swirling the pan slightly so the runny egg mixture on top hits the pan and cooks. Cook about 2 minutes, until eggs are just slightly shiny on top.
- Add pulled pork, peppers and onion to center of the omelet.
- Carefully lift up the edge of the omelet and check to see if the eggs are lightly golden on the bottom. Once they are, gently fold each side over the filling.
- Carefully slide omelette onto plate.
- Top with forkful of Curly’s pulled pork, diced jalapeños, nonfat Greek Yogurt and a sprinkle of Monterrey Jack cheese

Notes
- Have all your ingredients prepped and ready because each item cooks in just 1-3 minutes!
- “Saute” in water to save fat when softening the onion and bell pepper
- Save the fat for cooking the eggs – you want to be sure they didn’t stick.
- Don’t scramble the egg – slow down – let it set up – then pull the egg toward the center and let the uncooked portion hit the hot pan and cook and set up. The up-side of the omelette should look a little “wet” when you put your fillings in.
- Spoon ingredients down the center so you can flip the sides over top of the middle of the omelette
