Sausage Green Bean Potato Casserole is the ultimate in a meat and potatoes weeknight dinner! It’s loaded with smoked sausage, seasoned diced potatoes and fresh green beans.

It’s a one-dish meal that everyone in the family will love to eat – and you’ll love to make because it’s so simple! Dice it up – season it – oven it – done!!

Ingredients for Sausage Green Bean Potato Casserole
The main ingredients are all in the name but you can have fun when it comes to the seasoning mix!
- Yukon gold potatoes – I used full-sized Yukon gold potatoes but you could use russet potatoes, 1 pound baby creamer potatoes or even fingerling potatoes. Just be sure your pieces are all about the same size.
- Smoked Sausage or Kielbasa – I used a packaged smoked sausage link and sliced it but you could also use Sausage Kielbasa, individual smoked sausage links or even ring bologna
- Fresh Green Beans – I love green beans with potatoes but you could also swap with broccoli, brussels sprouts or even peppers and onions!
- Olive Oil – You could also use butter (melt butter) or vegetable oil
- Seasoning Mix: have some fun with this – these are the seasonings I used but if you like something else – add it – or if you like it spicy – add some chipotle seasoning or a shake of red pepper flakes
- Garlic salt – you can also use fresh garlic cloves or garlic powder if you’re watching your sodium
- Paprika
- Kosher Salt
- Black Pepper

How to Make Sausage Green Bean Potato Casserole
It doesn’t get any easier – just five minutes of prep time to cut up your three main ingredients, toss in seasoning and bake for 45 minutes of cook time. You’ll want to get the potatoes and sausage started first – and add the beans at the end.
- Preheat oven to 425 degrees
- Slice the smoked sausage into 1/3 inch thick slices.
- Wash potatoes and slice into 1.5-inch cubes
- In a large bowl, add the sausage, potatoes, olive oil, garlic salt, paprika, salt and black pepper and toss until coated.
- Spray a 9×13 baking dish with non-stick spray. Pour sausage and potatoes into the prepared baking dish. Place on the center rack and bake for 25 minutes.
- You could also use a cookie sheet and line it with foil for easy cleanup.
- Open oven and add green beans and stir. Bake an additional 20 minutes or until potatoes are tender.
- Remove from oven and enjoy!

Tips, Tricks & FAQs
Yes – you can use any of those! If you’re using smoked sausage with cheese – I would recommend not slicing or the cheese will all ooze out during the baking. But kielbasa, smoked sausage or even ring bologna – will all work in this recipe!
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week – or in freezer for up to three months. Reheat in the microwave for 2:30 minutes.

- Spicier – make it spicier by adding Chipotle Pepper Seasoning to your seasoning mix for more flavor & spice!
- Vegetables – swap out the green beans for broccoli, brussels sprouts or peppers and onions
- Frozen – Grab a bag of frozen green beans and use those instead of fresh
- Options for Proteins – you could easily swap out the smoked sausage for other meats like kielbasa, diced chicken, chorizo, chicken sausage or more!
