Starbucks Cinnamon Pull-Aparts are my favorite breakfast treat!!!! Fresh croissant pieces sprinkled with cinnamon sugar smooshed together and topped with brown sugar and cinnamon to pull apart one bite at a time. These warm little treats are just right for breakfast, brunch or a late night snack!

I love Starbucks – their website tells you all the ingredients – then you just have to figure out the amounts. The secret ingredient I never would have guessed in this one is…WHITE CHOCOLATE?! You don’t really taste it at all and I realized it was used as a bit of a binder to hold the pieces together.

Starbucks Cinnamon Pull-Apart Ingredients

Cinnamon Pull Aparts are basically individually monkey bread cups but you skip half the work by using pre-made croissants! They’re flaky and tender and pair perfectly with cinnamon, brown sugar and butter!

  • Croissants – you can use any croissants for this recipe – I found this new brand that was BOGO at Kroger and they were great!
  • Butter – I always use salted butter but unsalted works fine as well
  • White Chocolate – you could break off squares if that’s what you have but I used white chocolate chips. If you don’t have white chocolate, I would just add 1-2 more tbsp butter but you could also use regular chocolate chips although they will add more chocolate flavor (not a bad thing!).
  • Brown Sugar – I used light brown sugar but dark would work as well
  • Seasonings: Cinnamon & Coarse Sea Salt – my favorite is Saigon Cinnamon if you have it but regular is fine as well. If using a fine grain table salt – use less – just a pinch.

How to make Cinnamon Pull Aparts

These little individual treats are so tasty – but the only thing better than that is how EASY they are to make! Toss them in a bowl, pop them in parchment liners and bake for 10 minutes! They look fancy but couldn’t be more simple to make!

  1. CUT croissants in 5-6 small pieces each (if using large croissants) into a large bowl
  2. MELT butter and chocolate chips in a glass bowl
  3. STIR together salt, cinnamon and brown sugar in a small bowl
  4. DRIZZLE half of the butter and half of the cinnamon sugar over the croissant piecs and toss until coated
  5. LINE muffin tin with parchment cupcake liners and fill with 5-6 coated croissant pieces
    • If you don’t have these – you can put right in the muffin tin and it will make more than 8. The liners are tall and that’s what Starbucks uses. You could also use a Texas sized muffin tin for larger ones without the liner.
  6. MIX remaining sugar mixture with remaining butter and drizzle over top of croissant cups. Remelt butter if needed.
  7. BAKE at 350º for 10 minutes in the oven

Tips Tricks & FAQs

No – you can put the croissant pieces directly in the muffin tin – or use a Texas sized muffin tin. They will not be as tall as Starbucks unless you have the parchment liners to hold them in.

Sure but if you’re using raw dough – it will need to bake for longer.

Sure – you’ll just need more of them!

Be sure to coat them well with the butter and drizzle a little extra butter mixture on top before baking. But the crunch of those is nice with the softness of the ones in the bottom!

Just use a little extra butter. You could use milk chocolate but it’s going to add more chocolate flavor that will make them taste different than Starbucks version. (but still delicious!)

Ingredients
  

  • 6 croissants large
  • 8 tbsp butter melted
  • 1/3 cup white chocolate chips melted
  • 1/4 tsp coarse sea salt
  • 3 tbsp cinnamon
  • 3 tbsp brown sugar

Instructions
 

  • Preheat oven to 350º.
  • Cut croissants into 5-6 pieces each and place in a large bowl.

  • In a microwave safe bowl, add butter and chocolate chips. Microwave for 30 seconds and stir.
    8 tbsp butter, 1/3 cup white chocolate chips
  • Stir together salt, cinnamon and brown sugar in a small bowl.
    1/4 tsp coarse sea salt, 3 tbsp cinnamon, 3 tbsp brown sugar
  • Drizzle HALF of the melted butter and chocolate mixture over the croissant pieces and toss until coated. Sprinkle HALF of the cinnamon sugar mixture over croissant pieces and toss to coat.
  • Place parchment cupcake liners into cupcake pan and spray lightly with nonstick spray.
  • Place 5-6 pieces of croissant in each cupcake liner and push them together slightly without smashing them.
  • Add remaining cinnamon sugar mixture into remaining butter/chocolate mixture and drizzle over top of croissant cups.
  • Bake for 10 minutes. Remove and let cool slightly.
