Ingredients for Chocolate Strawberry Bark

I love the simplicity of this – strawberries are always delicious – and everybody has peanut butter and chocolate in the pantry. Here’s what you’ll need:

  • Strawberries – ripe strawberries are so delicious – you’ll want to slice them evenly so the bark is even
  • Peanut Butter – I like to use creamy peanut butter for this recipe
  • Chocolate – I used semi-sweet chocolate chips but you can use chips or melting chocolate chips. Use white chocolate chips, milk chocolate or dark chocolate.

Recipe Variations

Mix it up a bit and have some fun. Here are a few ideas:

  • No PB – just stick with the strawberries & chocolate
  • Yogurt bars – swap the peanut butter for plain Greek yogurt for an ice cream like texture
  • Cookies – crush up oreos and add to the top of the chocolate
  • Grapes – slice grapes in half lengthwise and have them as your base instead of strawberries
  • Nutella – swap the chocolate for nutella
  • Valentine’s Day – add those little candy hearts on top and use pink or red melting chocolate

How to make Strawberry Chocolate Bark Recipe

Such an easy recipe – I watched one TikTook video and laid out all the instructions just to make it super simple for you! Here’s what you’ll do:

  1. Lay a sheet of parchment paper onto a rimmed baking sheet
  2. Rinse strawberries, remove stems and slice strawberries
  3. Lay out strawberry slices into a rectangle on prepared baking sheet.
  4. In a medium bowl, melt 1.5 cup peanut butter in the microwave. Microwave for 20 seconds in a microwave safe bowl and stir. Microwave another 20 seconds until melted and runny.
  5. Pour peanut butter over strawberry slices and spread evenly. You can use a knife or an offset spatula if you have one.
  6. Place baking sheet in the freezer
  7. Place bag of chocolate chips in a microwave safe bowl and microwave for 30 second intervals – stir and microwave again until melted. Approx 1-1.5 minutes.
  8. Remove baking sheet from freezers. Pour and spread chocolate over peanut butter.
  9. OPTIONAL: sprinkle with flaky salt
  10. Place baking sheet back in the freezer for 1 hour.
  11. Remove baking sheet and, using a sharp knife or pizza cutter, cut bark into pieces. Lift pieces with a firm spatula and place 2-3 pieces in smaller bags and then place bags in a larger freezer bag.
  12. Remove pieces as desired, leave out for 2-3 minutes before eating.

Tips, Tricks & FAQs

How do you store leftover bark?

Store leftovers in ziploc bags in the freezer for up to 3 months.

Can I use melting chocolate?

Yes – you can use those melting chocolate disks if those are easier.

Can I use freeze-dried strawberries?

Yes – you can easily use freeze-dried strawberries and then you won’t need to keep the bark in the freezer.

My chocolate isn’t smooth when it melts and gets gloppy – what do I do?

Add a teaspoon of coconut oil to the chocolate and that will help smooth it out as it melts.

Can you eat them right out of the freezer?

Yes! I like the texture of the strawberries after it’s thawed for a few minutes.
