I might have a little bird that used to work at Texas Roadhouse in my circle! (Cue evil laugh) and all the secrets are MINE! The real helpful things about this recipe were the seasonings used on the mushrooms and onions as well as the process for how they make their gravy – it’s easy – but it’s always helpful to have the tips & tricks!

Texas Roadhouse Beef Tips Ingredients

  • Sirloin Steak – I purchased a sirloin steak and sliced into bite-size chunks. I highly recommend using Certified Angus if you can because it’s just such a better steak product. I visited once and they gave us samples of theirs vs others and WOW!!! You can find them at Meijer in my area.
  • Mushrooms – regular button mushrooms are fine here but you can always use portobello or baby bella if you like.
  • Onions – definitely sweet yellow onions for this one!
  • Seasonings – this is quite a list (all in the recipe card below) – but it includes the Texas Roadhouse Steak Seasoning – but you can always use your own favorite steak seasoning!
    • One note – Better than Bouillon Beef Base is in the list but you can also use whatever you typically use. The Better than Bouillon adds so much flavor though – I recommend trying it out if you haven’t!
    • You could also use Beef Broth instead of water & bouillon.

Make it Quicker & Easier

  • Mushrooms & Onions – Roadhouse actually makes them separately but they’re prepared much the same way – so adding them together saves a lot of time!
  • Steak – they grill their steak tips because – duh – but at home – it’s work to get the grill ready when they cook so quickly!!! You can use a grill pan or air fryer separately – or just use the skillet like I did. They cook in 2 minutes – LITERALLY TWO MINUTES!!!
  • Gravy – ok – if you’re really in a pinch – use a jarred gravy – but really it takes less than five minutes and has such a rich flavor when you make it yourself!

How to make Texas Roadhouse Beef Tips

  1. Mushrooms & Onions – mix together your seasonings first. Then we’ll add butter and olive oil to a large deep dish skillet (or Dutch Oven). Once melted, add the mushrooms & onions and seasoning. Saute then remove from pan and set aside.
  2. Steak – season your steak bites and make sure all sides are coated well. Add butter to the same skillet and then the steak. These only need to cook for a couple of minutes and they’re medium rare! Remove steak and set aside.
    • TIP: I really recommend Medium Rare for sirloin – any more and it will be too tough to eat!
  3. Gravy – now we’ve got all that good stuff in the bottom of the pan which makes it perfect for the gravy! Add butter to the pan and – once it melts – whisk in a little flour to make a roux. Then add water, Worcestershire and Bouillon (or use beef broth instead of water & bouillon) and let it simmer and thicken into a delicious gravy!
  4. Serve – to do it like Texas Roadhouse, plate your mushrooms & onions, top with the steak and drizzle the gravy over the top of everything. You can add a dollop of sour cream and serve with a side of mashed potatoes or Texas Roadhouse Seasoned Rice!

Tips Tricks & FAQs

Texas Roadhouse uses tender sirloin cut into bite-sized pieces, but stew meat can work too or upgrade to a New York Strip or Ribeye.

Stored in an airtight container, they’ll last 3–4 days in the refrigerator.

Ingredients
  

Mushrooms & Onions

  • 1/4 tsp coarse sea salt
  • 1/2 tsp sugar
  • 1/2 tsp black pepper
  • 3/4 tsp onion salt
  • 2 tsp dried minced garlic
  • 3 tbsp butter salted
  • 2 tbsp olive oil
  • 8 ounces mushrooms
  • 1 yellow onion
  • 2 tbsp water

Instructions
 

  • In a small bowl, mix together salt, sugar, pepper, onion salt & minced garlic. This is your mushroom seasoning.
    1/4 tsp coarse sea salt, 1/2 tsp sugar, 1/2 tsp black pepper, 3/4 tsp onion salt, 2 tsp dried minced garlic
  • Melt 3 tbsp butter and 2 tbsp olive oil in a large, deep dish skillet over medium-high heat. Add sliced mushrooms and sliced onions. Sprinkle mushroom seasoning over mushrooms. Sauté until mushrooms are tender and caramelized.

  • Add 2 tbsp water to pan and stir all the bits off the bottom of the pan.

  • Remove JUST the mushrooms & onions (not any extra sauce) to separate bowl or pan and cover to keep warm.
  • Season the beef sirloin tips with TR steak seasoning, ensuring they are well-coated.
    1 pound sirloin beef tips, 2 tsp Texas Roadhouse steak seasoning
  • To the same large skillet, add 1 tbsp butter. When butter is melted, add steak tips. (You can grill but it’s so quick this is easier.)

  • Sear steak tips for about 1-2 minutes on each side, or until they are nicely browned. Don’t overcook! Steak bites only take a couple of minutes to cook to medium rare. Remove from the grill, set aside and keep warm.
  • In the same pan, add remaining butter.

  • Once butter is melted, whisk in flour and cook for 1-2 minutes.
    2 tbsp all-purpose flour
  • Gradually add water, Worcestershire, bouillon and salt to the flour mixture, stirring constantly until the mixture thickens into a smooth sauce.
    1 ½ cups water, 2 tsp Worcestershire sauce, 1 tsp Better Than Bouillon beef base, 1/4 tsp coarse sea salt
  • Simmer the sauce for about 5 minutes to thicken and reduce.
  • Plate mushrooms and onions and top with beef tips and cover with gravy. Serve with a dollop of sour cream and a side of mashed potatoes or Texas Roadhouse seasoned rice.
