Texas Roadhouse Smothered Chicken

Texas Roadhouse Smothered Chicken is tender and juicy – then it’s cheesy too! Layered with sautéed mushrooms & onions and melty jack cheese. It’s my favorite chicken dish on the menu – and you can easily make it at home and it will taste even better!

Texas Roadhouse Smothered Chicken Ingredients
This is a main course the whole family will love! Chicken, grilled veggies and then topped with cheese (for those veggie-phobic kids!).
- 2 boneless chicken breasts
- 1 cup Italian dressing
- 1 sweet yellow onion
- 8 oz mushrooms
- 1 tbsp olive oil
- 1 cup shredded Monterey jack cheese

Recipe Variations for Smothered Chicken
I love this Smothered Chicken just the way it is – but you can change it up! Here are some ideas:
- Gravy – you can also get this with a gravy instead of melted cheese. Here’s an easy chicken gravy recipe if you need one. Or you can do a portobello mushroom sauce like the Roadhouse Portobello Chicken.
- Pork Chops – swap out those chicken breasts with boneless pork chops! They cook more quickly and will be just as delicious. Pork only needs to be cooked to 145º – just fyi. Pork is also a great source of lean protein just like chicken breasts!
- Fresh Vegetables – feel free to add more fresh vegetables if you like such as broccoli or thinly sliced carrots.
- Seasoning – if you don’t have Italian dressing – just sprinkle with a seasoning mix of herbs & spices like: salt, pepper, garlic powder, onion powder, rosemary & thyme.

How to make Smothered Chicken
This chicken recipe is really easy! I have a Traeger Smoker which is nice because you can use it as a smoker OR a grill! You can use any kind of grill – check the FAQ if you want to know how to make this in your air fryer or in your oven – but the grill is really the best way to make sure it’s just like Texas Roadhouse!
- Preheat grill to 350º (or medium heat)
- Place chicken breasts in a zipper freezer bag with Italian dressing and refrigerate for at least 30 minutes (up to overnight).
- Slice onion in half and then into slivers. Clean and slice mushrooms. Toss onions and mushrooms in olive oil and add to grill pan.
- Place chicken breasts on grill as well as grill pan with onions and mushrooms.
- After 5-8 minutes, turn chicken breasts and stir mushrooms and onions and cook 5-8 min more.
- After 10 min cook time, check chicken with meat thermometer at thickest portion of the breast and be sure chicken is 155º-160º. If chicken is not up to temp, continue to cook until it reaches temperature. It will finish cooking as it rests.)
- Move sauteed onions and mushrooms to one side of grill pan. Add chicken breasts into grill pan. Top with onions and mushrooms. Then top with grated cheese.
- Turn the heat down on the grill to 300º or low and shut lid to melt cheese for 2-3 minutes.
- Once cheese is melted, remove grill pan and let chicken rest for 3-5 minutes and serve.

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for 3-4 days. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.
– Air Fryer – this would be my 2nd choice. Chicken is perfect in the air fryer. Cook in air fryer for 12-15 minutes instead of using the grill. You can also have your mushrooms & onions cooking in the air fryer at the same time if it’s big enough. Layer it all up – add the cheese – and air fry an additonal 2-3 minutes at 275º for the cheese to melt (and not blow all over the place!)
– Stove Top/Oven – I would combine these two! Sear the chicken in a skillet on the stove top and then bake for 20 minutes. While the chicken is baking, sauté the mushrooms and onions. Pile them with the cheese and broil on low for 2-3 minutes to melt the cheese.
