These Traeger Smoked Brussels Sprouts will be your new favorite vegetable side dish. Sauteed with diced bacon and tossed in a maple syrup sauce – nobody will be able to resist these caramelized bites of deliciousness!

  • Carmelized – Sauteeing the sprouts for a longer period of time at a lower temp gives them an amazing caramelization!
  • Bacon – Thick-sliced bacon adds a little meatiness and extra smoky flavor.
  • Spicy Sauce – a drizzle of maple chili powder sauce at the end will give this easy side dish an extra bite of flavor!

Ingredients for Smoked Brussels Sprouts

Simple ingredients – Brussels sprouts, bacon and maple syrup are an amazing combination in this recipe.

  • Brussels sprouts – These mini cabbages are so amazing – you’ll want 2 pounds! Remove the ends and slice in half.
  • Bacon – Thick cut bacon is my favorite – you want something to hold up to the little cabbages.
  • Olive oil – I tend to use Extra Virgin Olive Oil for everything and have this ceramic decanter that is so handy!
  • Maple syrup – Highly recommend using REAL maple syrup – so much more flavor! You could swap out honey if you’re out of maple syrup.
  • Garlic salt & Black pepper – I love having garlic in there vs regular salt
  • Ancho chili powder – you can use chipotle powder or any regular chili powder – I like the flavor of the Ancho chili powder. I only used 1/2 teaspoon for a hint of spice – if you like more spice – you could bump that up to 1-2 teaspoons.

Recipe Variations

  • Onion – diced onion would also be a great addition to this perfect side dish
  • Bacon Fat – swap out the olive oil for bacon fat = more flavor!
  • Balsamic Glaze – not a fan of the maple syrup? You can use a Balsamic Glaze or even barbecue sauce instead.

How to make Smoked Brussels Sprouts

Get the Traeger ready – smoking these bad boys will only take about 45 minutes and you’ll have a pan full of caramelized heaven.

  1. Preheat your smoker to 225º
  2. Prep your Brussels sprouts by cutting the stem end off and slice them in half. For extra large ones, quarter them. Be sure to keep all the outer leaves! They get really crispy!
  3. In a large mixing bowl, add sprouts and bacon. Pour in olive oil, salt, garlic powder and maple syrup. Toss to coat. 
  4. Heat a cast iron skillet over medium high heat on the stove top. Add the sprouts and bacon mixture to the skillet. Saute mixture for 5 minutes. 
  5. Move cast iron skillet to the Smoker and close the lid. Smoke at 225º for 45 minutes until bacon is cooked and Brussels sprouts are fork tender. (If your skillet isn’t big enough you can transfer them to a baking sheet before placing on the Traeger.)
  6. In a separate small bowl, whisk together maple syrup and chili powder. 
  7. Transfer the Brussels sprouts to a serving bowl and toss with the chipotle maple sauce.

Nah – I never have!

What gives Brussels sprouts a better taste?

Uh – bacon and maple syrup – I promise!!!

What kind of pellets should I use to smoke my veggies?

There are many flavors of pellets that work in your Traeger pellet grill. I keep it simple and always use the Traeger Signature Blend which is a blend of Maple and Cherry. That said if you’re looking for something specific for veggies – the best are Pecan, Applewood and Cherry. If you want something stronger – Hickory is always good.

Can you make these Brussels sprouts in oven?

How do you store and reheat leftover Brussels sprouts?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the microwave for 1-2 minutes or in the air fryer at 375º for 3-4 minutes.

  • Preheat your smoker to 225º

    2 lb brussels sprouts

    5 slices bacon, 3 tbsp maple syrup, 2 tbsp olive oil, 1/2 tsp garlic salt, 1/4 tsp black pepper
  • Heat a cast iron skillet over medium high heat on the stove top. Add the sprouts and bacon mixture to the skillet. Saute mixture for 5 minutes. 
  • Move cast iron skillet to the Smoker. Smoke at 225º for 45 minutes until bacon is cooked and Brussels sprouts are fork tender. (If your skillet isn't big enough you can transfer them to a baking sheet before placing on the Traeger.)
  • In a separate small bowl, whisk together maple syrup and chili powder. 
    2 tbsp maple syrup, 1/2 tsp ancho chili powder
  • Transfer the Brussels sprouts to a serving bowl and toss with the chipotle maple sauce.
