5 Ingredients in Crock Pot Beef Stroganoff Recipe
Beef Stroganoff can be a daunting dish – but NOT TODAY! This dish is made in the crock pot with only FIVE ingredients!!! Here’s what you’ll need:
- Sirloin Steak or Beef Stew Meat – I chose Sirloin Steak because I could pick the cut of beef myself. With stew meat you’re getting leftovers of whatever – could be tender, could be tough. You could also dice up a chuck roast if you have that.
- Cream Soups – I used one can each of cream of mushroom & cream of onion soup – you could also use the golden mushroom soup
- Mushrooms – I love love love mushrooms so I went with the big 16 oz package and cleaned & sliced myself.
- Egg Noodles – I have always preferred No Yolks brand
- Sour Cream – standard issue here!

Recipe Variations
This is a simple version of stroganoff – but you can jazz it up a little here and there. Here are a few ideas for easy variations:
- Seasonings – this is a very simplified verion – you can add garlic, salt, pepper and Dijon Mustard and Worcestershire sauce to the dish if you like. I would add 2-3 cloves minced garlic (or 1 tsp garlic powder) and 1/4 tsp each salt & pepper to the meat when you brown it and add 1 tbsp Worcestershire to the slow cooker.
- Ground Beef Stroganoff – swap the steak for hamburger and make a hamburger stroganoff
- Cream Cheese – you can swap the sour cream with cream cheese or use both. If you use cream cheese, the sauce may be a little thicker. You can thin with beef broth.
- Rice – if noodles aren’t your thing, you can serve over rice

How to make 5 Ingredient Slow Cooker Beef Stroganoff
I always prefer to sear the meat ahead of time – I’m not sure it changes the flavor but it definitely gives the meat a much nicer color vs. a kind of gray steamed color. But if you’re short on time – you can just drop the meat in the crock pot.
- OPTIONAL: In a large skillet or Dutch oven, add 2 tbsp olive oil over medium high heat. Add diced steak and brown on all sides. Remove from heat.
- Place browned meat, cream of mushroom soup, cream of onion soup and sliced mushrooms in the crockpot. Stir mixture together.
- Cook on high for 3 hours or low for 6 hours.
- About 10-15 minutes before eating, prepare egg noodles according to package instructions.
- Just before serving, add sour cream to crock pot and stir well.
- Serve over egg noodles. Sprinkle with fresh parsley.

Tips, Tricks & FAQs
Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the microwave for 1-3 minutes. If you have a lot to reheat, you can use a pan on the stove top and bring to a simmer.
Mix 1 tbsp cornstarch in a bowl with 1/4 cup water. Whisk or shake until combined and pour into the sauce. Stir and let cook for another 20 minutes for a thicker consistency.
It’s a fairly dairy-heavy dish so the sauce will not reheat well after freezing.
