What You Will ❤️ About Twice Baked Potatoes in the Air Fryer
You will love that you can have these fluffy, loaded twice baked potatoes on the table in about 35 minutes! Now – I did NOT use big russet potatoes – there’s no need! I used medium sized Yukon gold potatoes – why? They cook faster and are more delicious!

Twice Baked Potato Recipe Ingredients
Twice baked potatoes are basically a baked potato filled with cheesy mashed potatoes! Here’s what you’ll need:
- Yukon gold potatoes – these are smaller, creamier and cook much faster than a big ol’ Russet!
- bacon – you need bacon and you can cook it WITH your potatoes!
- sour cream – you can swap plain Greek yogurt if you’re trying to be healthier or heavy cream if you’re not!
- shredded Cheddar cheese – whatever cheese you have and the flavor you like is what you should use!
- salted butter
- Pinch salt & black pepper –
- green onions or chives

How to Make Twice Baked Potatoes in the Air Fryer
This is an easy recipe and I love it because it’s 100% air fryer – baking the potatoes, frying the bacon and putting it all together!
- Poke potatoes with a paring knife in a few spots. Spritz outside of potatoes with olive oil spray and a sprinkle of coarse sea salt. Place potatoes in air fryer and air fry at 400°F for 20 minutes.
- Open air fryer and place bacon in air fryer basket. Close and air fry 8 minutes more.
- Open air fryer and check potato for doneness—a paring knife should slide in easily. Remove potato and bacon from air fryer and let cool 5 minutes. If potato is not done, air fry 3–5 minutes more. Dice bacon and set aside.
- Slice cooled potato in half and scoop out 80 percent of flesh insides. Be sure to leave a thin layer of flesh around potato skins. Add scooped potato flesh to a medium bowl.
- In bowl with potatoes, add sour cream, butter, salt & pepper. Mash with a fork until combined. No need to use a hand mixer – the fork does just fine! Fold in 1/3 cup cheese and half of diced bacon.
- Spoon potato mixture into potato skins and top with remaining Cheddar.
- Using tongs, return potatoes to air fryer and air fry at 370°F for 5 minutes, until cheese is melted.
- Remove potatoes from air fryer and top with sour cream, bacon and green onions.

Tips, Tricks & FAQs
I recommend spritzing them with olive oil on the outside – this will definitely help. And cooking them with the bacon helps too!
Small-medium potatoes will take about 20-25 min at 400º. The bigger the potato, the more time you’ll need.
Store leftovers in an airtight container (I like these glass ones) and refrigerate up to a week – or freeze up to three months. Reheat in the microwave for 1-2 minutes or in the air fryer at 300º for 5 minutes.
You can reheat them at 300º for 5-7 minutes, depending on how big they are. The lower temp takes a little longer but won’t burn the tops.

Recipe Variations
- Mashed Potatoes – I did a simple mashed potato with just butter & sour cream – but feel free to jazz them up with more seasonings like garlic
- Cheese – I used sharp cheddar cheese but sub out with your favorite cheese – I like a sharp cheese to break through the creaminess of the potatoes
- Bacon – if you’re not a meat eater, feel free to leave out the bacon
- Potatoes – I used Yukon Gold, but you could easily use Russet or even Red potatoes. You’ll just need to adjust your baking time if your potatoes are larger.

- 2 tbsp green onions sliced
