Ingredients for Chicken Fried Rice

Ingredients are simple – and feel free to add more veggies if you like! This will feed at least 4 and probably 6 people. Here’s what you’ll need:

  • Cooked Rice – I used white rice but jasmine rice or brown rice also works great. Be sure to use day-old or leftover rice! It needs to be a little dried out to get the slightly crispy texture of fried rice.
  • Chicken Breast – dice chicken into bite-sized pieces prior to cooking. It will cook quicker!
  • Veggies: Carrots & Yellow Onions
  • Eggs
  • Seasonings: Canola Oil, Garlic Salt, Black Pepper
  • Garlic Butter: Garlic & Butter
  • Stir Fry Sauce: Lemon Juice, Soy Sauce, Ginger Paste (or fresh ginger)

Recipe Variations

Fried Rice is always delicious but there are little things you can do to make it your own. Here are a few ideas:

  • Protein – swap out the chicken for shrimp or steak! If using shrimp, you’ll only need to cook for 1-2 minutes and you’ll want to remove it from the griddle until serving or it will overcook and be rubbery.
  • More veggies – I’ll do another recipe that’s more “hibachi restaurant” style but feel free to add more veggies like frozen peas, fresh zucchini and broccoli.
  • Sesame Oil – Sesame oil is very popular in fried rice and adds a flavor punch! You can add 1-2 tsp to your stir fry sauce if you love the taste.
  • Cauliflower Rice – if you’re a fan of cauliflower rice – you can definitely use that instead of regular rice.

How to make Chicken Fried Rice on a Flat Top Grill

If you’re new to the Blackstone – here’s my biggest tip – prep EVERYTHING before you even walk outside. Have chicken & veggies chopped, garlic butter mixed, stir fry sauce made and all your tools set out. Everything cooks quickly and you won’t have time to run back in the house! Let’s get started!

  1. DAY BEFORE: Cook rice according to package directions
  2. Fluff the rice with a spoon to separate the granules as much as possible. Then, store it in a shallow container or large baking dish. Refrigerate overnight so it dries out a bit. You can lightly cover with plastic wrap but don’t seal tightly.
  3. To make Garlic Butter: In a medium bowl, mix together softened butter and garlic and mix well. Set aside.
  4. To make Stir Fry Sauce: In a small bowl, whisk together ginger, lemon juice and soy sauce and set aside.
  5. On Blackstone turn entire griddle to medium high heat. Add 2 tbsp canola oil to right side of griddle. Add onion and carrots and saute until softened and starting to brown, about 5-7 minutes. Add half the green onion. Scoop veggies together and move to the edge of the griddle.
  6. Once your veggies are going, on left side of griddle, add 2 tbsp garlic butter to griddle. Place diced chicken breasts onto griddle and sprinkle with garlic salt and pepper. Heat for 5-7 minutes per side of chicken. 
  7. While chicken is cooking, on right side of griddle, lower heat to medium and add silicone ring to griddle. Add 1 tsp of garlic butter inside ring. Once butter is melted, crack eggs into ring and lightly scramble beaten eggs. Remove ring and scoop eggs together with the vegetables. Lower heat on the right to low.
  8. On griddle, once chicken is cooked through, move chicken to the cooler side of the griddle. 
  9. On left, add 2 tbsp garlic butter to griddle. Add cooked rice and mix it well so it gets coated with butter. Add remaining garlic butter. Using spatulas, toss rice so that it is thoroughly coated in the garlic butter. Press the rice into the griddle with large spatula so it has a chance to brown and get a little crispy. Keep tossing until the rice is done to your liking – about 5 minutes.
  10. Add in the chicken, vegetables and egg to the rice mixture. Chop and stir until combined. Add in stir fry sauce and combine until coated. 
  11. Serve into four bowls and garnish with remaining green onions, sesame seeds and soy sauce.

Tips, Tricks & FAQs

How do you store and reheat leftover fried rice?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. You can freeze up to three months. Reheat individual portions in the microwave for 1.5 minutes. If reheating a larger amount, use a skillet and add a bit of oil to reheat. You might also make up a smaller batch of the stir fry sauce to refresh the flavors.

Can I use low sodium soy sauce?

Sure! Fried rice is always a bit salty so feel free to use low sodium.

Tools Needed to Make Chicken Fried Rice on the Blackstone

The Blackstone Grill is a great cooking tool – but you will need some accessories. Here are the must-haves that I used for this Blackstone chicken fried rice recipe:

  • Metal Spatulas – This is 100% necessary! I’m not at all ambidextrous – but I managed to figure out how to use both of these spatulas when making my fried rice. They were super helpful to turn the rice and to scoop and toss it. The second spatula helps to scrape off the first.
  • Silicone Ring – while not completely necessary it really helps! The eggs are going to and this holds them in a bit. 
  • Squirt bottles – These are essential – one for water and one for vegetable oil
  • Scraper – this is great for cleanup – squirt water on the griddle and scrape
  • Lint free towels – I use these with the long tongs to finalize clean up!

Ingredients
