All you need is a fireplace and a pile of leaves to jump into! The best part – this home-cooked meal is ready in 30 minutes (or less!)!

Ingredients for Chicken Sausage Soup
Soup in the fall and winter is always a fun endeavor because you can pick and choose all the ingredients. This is YOUR soup – don’t like mushrooms – leave them out! Not a bean fan – swap out for small pasta – like ditalini. But here’s what you need to make this version:
- Chicken Sausage – there are a lot of varieties out there from uncooked to pre-cooked – I went for a pre-cooked chicken apple version for more fall vibes! Anything will work though – even regular Italian pork sausage.
- Vegetables – carrots, celery, onion, mushroom, sweet potato, Northern beans (or cannellini beans), kale
- Don’t like kale? You can use spinach or escarole but put in at the VERY end before you serve!
- Love tomatoes? Throw in a can of fire roasted tomatoes!
- Liquids – chicken stock or broth, water, olive oil
- Like it creamy? You could add a cup of heavy cream or half and half instead of water.
- Spices – flour, garlic, cumin, coarse Kosher salt
- Like it spicy? Add 1/2 tsp red pepper flakes!

How to make Chicken Sausage Soup
I love one-pot recipes and this Chicken Sausage Soup is made in a Dutch oven so there’s only one dish to clean up! It’s probably my favorite kitchen tool! Here’s how to make this comfort food delight:
- HEAT oil in a Dutch oven and brown chicken sausage then remove and set aside.
- ADD more oil and saute mushrooms, carrots, celery, onion & garlic until softened.
- ADD flour and stir until veggies are coated
- ADD cumin, salt, sweet potatoes, beans and chicken broth. Cover with lid & simmer for 10 min
- ADD kale, chicken sausage & water and stir until kale is wilted. Simmer for 5 minutes.
- SERVE with a sprinkle of Parmesan cheese

- 4 tbsp olive oil split
- 12 oz. chicken apple sausage sliced
- 2 medium carrots diced
- 2 stalks celery diced
- 1 cup yellow onion diced, 1/2 large onion
- 8 oz mushroom sliced
- 3 cloves garlic minced
- 1/4 cup flour
- 10 oz frozen sweet potato diced – if using fresh sweet potato – dice and steam for 3 min before adding to soup
- 3/4 tsp cumin
- 1/2 tsp coarse Kosher salt
- 30 oz great northern beans drained and rinsed
- 4 cups chicken broth
- 1 cup water
- 1 bunch kale chopped
Instructions
- Heat olive oil in a large pot or dutch oven over medium heat, then add the chicken sausage and cook until it's golden brown on both sides. Remove it and set it aside.4 tbsp olive oil, 12 oz. chicken apple sausage
- Add 1-2 tbsp additional olive oil to the pot, then add the mushroom, carrots, celery and onion and sauté for 5-6 minutes until soft, then add the garlic and sauté for 1 minute.2 medium carrots, 2 stalks celery, 1 cup yellow onion, 8 oz mushroom, 3 cloves garlic
- Add flour and stir until veggies are coated1/4 cup flour
- Next, add cumin, salt, sweet potato, beans and chicken broth.10 oz frozen sweet potato, 3/4 tsp cumin, 1/2 tsp coarse Kosher salt, 30 oz great northern beans, 4 cups chicken broth
- Cover and Bring soup to a boil over medium-high heat, then uncover and reduce heat to a simmer and simmer it for 10 minutes
- Add the kale, chicken sausage and water and stir until the kale is wilted.1 bunch kale, 1 cup water
- Simmer for 5 min and serve with a sprinkle of Parmesan.
