Chili Cheese Coney Sliders are going to be your new game day favorite! Bonus: if you’re a Cincinnati Bengals fan – they’re made for you! Slider buns topped with hot dogs, Cincinnati chili, mustard, onions and – of course – Cheddar cheese. These are messy, melty and oh so good!!!!

WHY YOU’LL ❤️ THIS RECIPE!

You don’t have to live or be from Cincinnati to love their chili. It’s different than “regular” chili as it’s very runny and has cocoa and Cinnamon – yeah – wild right?! And if you are a native – and love a cheese coney like I do – this is what would happen if Cheese Coneys & Sliders had a baby!

Chili Cheese Coney Slider Ingredients

Skyline Cheese Coneys are pretty legendary and I don’t want to mess with a good thing – but if you’re not in Cinci you can still make these delicious sliders with your own chili (or whatever canned chili you like!). Here’s what you’ll need:

  • Chili – I’m modeling these based on Skyline Chili in Cincinnati – so that’s what I’m using but you could easily use any canned or leftover homemade chili.
    • Not from or near Cinci? Make some Cincinnati Chili for yourself!
    • Don’t have or like Cinci chili – feel free to use any canned chili!
  • Hot Dogs – Skyline Chili’s hot dogs are small and pretty flavorless – so I chose cheap hot dogs to stay as true as I could. I normally am a Nathan’s only girl – but again – here – the Chili is the star of the show!
  • Slider buns – obviously this is a necessity – love any reason for King’s Hawaiian!
  • Mustard – The standard on a Cincinnati Cheese Coney is yellow – but i’m using a Sweet & Spicy mustard for an extra kick. (that Sweet & Spicy variety is available at Kroger!)
    • I’m a big fan of Woeber’s Mustard – they’re an Ohio mustard brand and they have lots of unique varieties – they use their Yellow mustard in Skyline restaurants as well!
  • White Onion – a sprinkle of diced white onion – you can get a coney with or without mustard & onion but I – of course – do it all!
  • Mild Cheddar Cheese – it’s essential that it’s finely shredded Mild Cheddar to be authentic for a Skyline Cheese Coney.
    • I’m a big believer in “use what you have” – so if you have medium or sharp cheddar or even colby jack cheese – go for it – the mild cheddar pairs best with Cincinnati chili

Tips & Tricks for Chili Cheese Sliders

These are super simple to make but here’s a few ways to make them a little easier and better!

  • Messy – anything involving chili can get a little messy because Cincinnati chili is fairly runny – I recommend not putting on too much chili. A 10 oz can (1.25 cups) is good – more isn’t better in this case – they just get sloppier.
    • The same goes for if you’re using your own chili – you want it as “dry” as possible so it all doesn’t get soggy.
  • Mustard – Woeber’s Mustard has so many options – have fun with this. Yellow mustard is fine but the Sweet & Spicy (available at Kroger and Amazon) really added a lot of flavor but didn’t overpower the chili.
  • Reheating – I highly recommend reheating leftovers in the oven or air fryer. Slider buns are so soft – they’ll get too hot and lose their fluffy texture in the microwave.
  • Extra Toppings – you could add kidney beans or jalapenos to the sliders as well!

How to make Chili Cheese Coney Sliders

These are so simple to make and the kids can even help get ready for game day! It’s just simple layers and there’s usually a hot dog leftover for the kids (or the dog)! Here’s how to make the sliders:

  1. SLICE your Hawaiian rolls in half and set the top aside. Place bottom buns in a sprayed baking dish.
    • I used a sheet pan just because its easier to take pics – I would recommend a pan with sides that holds it together a little better.
  2. SPREAD mustard over buns
  3. SLICE hot dogs in half vertically & horizontally and lay out over the slider buns. You’ll need 6-7 hot dogs.
  4. POUR chili over top of hot dogs
  5. SPRINKLE onions over top of chili
  6. COVER onions with cheese and tops of slider buns
  7. MELT butter and stir in mustard. Brush tops of the rolls with melted butter mixture.
  8. COVER with foil and bake for 25 minutes at 350º. Remove foil and bake 3 more minutes until tops are golden brown.

Ingredients
  

  • 12 pack Hawaiian slider rolls
  • 3 tbsp mustard
  • 8 hot dogs sliced vertically and horizontally
  • 10 oz Skyline chili 1.5 cups
  • 3 tbsp white onion diced
  • 1 1/2 cups mild cheddar cheese finely shredded
  • 1 tbsp butter
  • 1 tsp mustard

Instructions
 

  • Preheat oven to 350. Slice slider rolls in half. Spray rectangular baking dish with non stick cooking spray

  • Place bottom buns in pan and coat with mustard
    3 tbsp mustard
  • Slice hot dogs vertically and then in half horizontally and Lay hot dogs across rolls.
    8 hot dogs
  • Stir chili and Pour over the top of the hot dogs.
    10 oz Skyline chili
  • Sprinkle onion and cheese over chili
    3 tbsp white onion, 1 1/2 cups mild cheddar cheese
  • Add tops of buns onto sandwiches
  • In a microwave safe small bowl or glass, microwave butter for 20 seconds until melted. Stir in mustard.
    1 tbsp butter, 1 tsp mustard
  • Baste tops of the sliders with mustard butter.
  • COVER with foil and bake for 25 minutes at 350º. Remove foil and bake 3 more minutes until tops are golden brown.
