Copycat Starbucks Egg Bites Recipe Ingredients

This copycat recipe pulls the simple ingredients straight from the Starbucks website! I’ll provide substitutions for this delicious breakfast if you need them.

  • Egg Whites – you can use whole eggs but these are the most low-cal version because they only use egg whites.
    • You can also use liquid egg whites that come in a carton.
    • You need 1.5 cups of egg whites – which takes 12 whole eggs (separated) – or the carton version
  • Cottage Cheese – I used low-fat cottage cheese (2%)
  • Hot Sauce – add more if you like a little spicy
  • Coarse Sea Salt
  • Monterey Jack Cheese & Feta Cheese – these are in the Starbucks version but use your favorite cheese. The egg whites are fairly bland so cheese like Co-Jack, Mozzarella or Cream cheese would work well.
  • Roasted Red Pepper – you can roast a red bell pepper in the oven but I just bought a jar of roasted red peppers and diced them up very finely
  • Fresh Spinach – you only need 1/4 cup, kale would work as well
  • Green Onions – this really added a nice crunch in the egg bites!

How to Make Egg White & Roasted Red Pepper Egg Bites

There’s no need for fancy equipment like a sous vide cooker or silicone molds when you make egg bite recipes at home. Grab your blender and a muffin tin and you’re ready to make this easy breakfast recipe.

  • Recipe makes 6 large egg bites, you can easily double or triple the recipe.
  • Pre-heat oven to 300º and place a baking dish that is filled with 2″ water on the bottom rack. This will create a humid environment and help the eggs cook evenly and make them light & fluffy like Starbucks!
  • While oven is preheating, grate jack cheese and dice veggies. 
  • In a blender, add egg whites, cottage cheese, hot sauce and salt. Blend on high for 30 seconds until light and frothy. 
  • Pour egg mixture into a large bowl and add jack cheese, red pepper, spinach, green onion and feta. Stir until combined. 
  • Spray a jumbo muffin tin with a little non-stick spray. Using a scoop-style measuring cup, fill the muffin cups with the egg mixture. I used a “texas sized” muffin pan and they were approx half full 
  • Bake in the oven for 25-27 minutes, or until the center of the egg bites are just set.
  • Remove from oven and let cool for 5 minutes, then use a spatula, carefully remove them from the muffin tin. Enjoy

The Egg White & Roasted Red Pepper have 170 calories for 2. I used a jumbo muffin pan so they’re a little more – but you could use a regular muffin tin for something about the same size as Starbucks sous vide egg bites.

Can you make egg bites in the Instant Pot pressure cooker?

Do I need to use the silicone mold to make egg bites?

Heck no – no need for those silicone egg bite molds! You can use a muffin tin and get the same results. The water in the oven helps them steam and get juicy like the Sous Vide machine does.

Do you have to use a water bath?

Nope! I found just as much success by placing another pan with 2″ water in the oven while it preheats. This creates a steamy oven that keeps the egg bites moist.

How do you store and reheat leftover egg bites?

This is the perfect make ahead breakfast! Make up a batch of this easy egg bite recipe ahead of time and enjoy all week. Store leftovers in an airtight container and refrigerate up to a week – or freeze up to three months. Reheat in the microwave for 1 minute.

  • Protein – you can always add crispy bacon bits or diced ham

Ingredients
  

  • 4 cups water
  • 1.5 cups egg whites use cartoned product or separated egg whites from 12 eggs
  • 1/4 cup cottage cheese
  • 1 tsp hot sauce
  • 1/8 tsp coarse sea salt
  • 1/2 cup Monterey Jack cheese grated
  • 1/4 cup Feta cheese crumbled
  • 1/4 cup fresh spinach
  • 2 tbsp roasted red peppers diced
  • 2 tbsp green onion finely diced

Instructions
