Air Fryer Breakfast Potatoes Ingredients

Whether you call them diced, breakfast or air fryer potato cubes – these crunchy little guys are easy to make and – it’s even a vegan recipe (without the sour cream topper)! Here’s what you need:

  • Small Potatoes – I used red potatoes but any baby potatoes will work (such as yukon gold potatoes) – you can use russet potatoes but the baby potatoes cook more quickly.
  • Water
  • Olive Oil
  • Seasonings: Garlic, Sea Salt, Paprika, Red Pepper Flakes – swap out chili powder for red pepper flakes if you’re not a fan – or leave them out entirely for less spice

I love the flavor of the seasoning blend I used – it’s got a slight kick for more punch. But there are all sorts of spice combos that are great with potatoes. Here are a few other ideas:

  • Roasted Potatoes – salt, garlic powder, oregano, thyme & rosemary
  • Mediterranean – basil, Greek oregano, bay leaf and fennel
  • Italian – basil, oregano, garlic, thyme, marjoram
  • Cheesy – Dijon mustard & Parmesan cheese

How to make Diced Potatoes in the Air Fryer

This easy air fryer recipe is great because I guarantee you won’t have any burnt taters! You can’t say that about a frying pan! And using parchment liners makes cleanup a breeze!

  1. Wash your potatoes and dice them into small cubes. The closer the cubed potatoes are in size, the more evenly they will cook. 
  2. Soak the cut potatoes for 10 minutes in cold water. This will help remove some excess starch and allow them to crisp up more. Once they have soaked, drain them and then pat them dry with a paper towel.
  3. In a large bowl, toss potatoes with olive oil, garlic, salt, paprika and red pepper flakes
  4. Place diced potatoes in your air fryer basket in a single layer – some stacking is fine – but you may need to do in batches. You want most of the surface area of the potato to be exposed. Feel free to use a parchment liner if you like for easy cleanup.
  5. Air Fry at 380º for 20 minutes, giving the basket a good shake at the 10 minute mark. Turn temp up to 400º and air fry an additional 5 min. 
  6. Serve with a dollop of sour cream or ketchup. Or be crazy – and serve with syrup – my mom always did and it’s my favorite!

How do you store and reheat leftover diced potatoes?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the air fryer at 300º for 4 minutes. 

What are ways to use leftover air fryer diced potatoes?

Breakfast tacos are a great option but you could also make a breakfast casserole with them as the base instead of hashbrowns! Or make a poutine with gravy & cheese topping!

Could I add onions to these potatoes?

Sure thing – when you shake the potatoes after 10 minutes – add your diced onions and sprinkle in a little more olive oil! Then cook the rest as directed.

Do you have any favorite dipping sauces for these potatoes?

Of course! Guy Fieri’s Cheese Sauce is always good on taters or my Buffalo Ranch Dressing is great for a dipping sauce! These sauces are good on french fries as well!

  • 1.5 lb red potatoes
  • 4 cups cold water
  • 2 tbsp olive oil
  • 1 tbsp garlic minced
  • 1 tsp coarse sea salt
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes
