Cheese Fries with Bacon

These Cheese Fries with Bacon are a copycat from my recent trip to Aruba! A week in Aruba and we hit up Lucy’s for this cheesy goodness more than once! Loaded with melty cheese, meaty bacon, tomatoes, onion and a spicy Chipotle Ranch dressing.

What you’ll need to make Bacon Cheese Fries
There are some obvious ingredients here – but you can add your own flavor if you’d like! Not a fan of chipotle ranch – try a pickle ranch or a Buffalo ranch!
- French Fries – for two people, I used 1/2 bag of fries – you can you any style of fries
- Bacon – I like using thick cut bacon but your cooking time may vary if you’re using thin slices
- Cheese – duh – how do you make cheese fries without cheese? Use what you like – my favorite is colby jack or cheddar – but mozzarella or monterey jack are good too! Or put them all together!
- Tomatoes & Onion – dice up some tomato & onion to throw on top for crunch and acid
- Chipotle Ranch – scroll down to find out all the ways you can make this for yourself!
- Additional Topping Ideas – Diced green onions or chives & sour cream (instead of ranch)

Ways to make Chipotle Ranch
I like to make my own ranch dressing and then add in flavor to it based on what I’m having – here are different ways you can have Chipotle Ranch dressing at home:
- Buy It – you can find a spicy ranch at most stores
- Ranch + Hot Sauce – I bought this Chipotle Hot Sauce a while back and mixed it in with Ranch Dressing for this recipe
- Ranch + Chipotle in Adobo – take the sauce from the can and mix with ranch – or throw it in an immersion blender if using one of the peppers
- Ranch + Chipotle Seasoning – using a dry Chipotle seasoning is another way to get that spicy ranch flavor!

How to make Cheese Fries with Bacon
Making cheese fries a little more complicated than you’d think! You actually want more fries and to layer the cheese in the fries a little so you get the cheese throughout the fries. Double the recipe if you’re serving a crowd on game day! Here’s how to make them:
- BAKE your bacon and french fries until golden brown
- REMOVE from oven and drain, cool & chop bacon
- ADD cheese to the fries and put back in the oven
- CHOP tomatoes & onions
- MIX ranch & chipotle sauce
- PULL out the fries with melted cheese and plate them. Top with bacon, tomatoes and onions and then drizzle with chipotle ranch.

Cheese Fries with Bacon
Equipment
Ingredients
- 13 oz frozen Fries 1/2 bag
- 4 slices Bacon
- 2 cups cheddar Cheese grated
- 1 roma Tomato diced
- 2 slices White onion diced
Chipotle Ranch Dressing
- 1/3 cup ranch dressing
- 1 tsp chipotle pepper hot sauce or seasoning or chipotle in adobo sauce with peppers
Instructions
- Preheat oven to 425º
- Place fries in a single layer on rimmed baking sheet. On a separate rimmed baking sheet with a baking rack, lay out 4 slices of bacon.13 oz frozen Fries, 4 slices Bacon
- Place sheet pans in oven and bake for 10 min. Rotate pans and bake for 10 more minutes until bacon and fries are golden brown.
- Remove pans from oven and place bacon on paper towels to drain and cool slightly
- Add shredded cheese to top of fries and place back in oven for 3-5 minutes. I recommend having more fries than you think. You need 2 layers of fries for one thick layer of cheese or it’s a little too much.You can turn the oven to broil on low if you like – but the cheese melts just fine at 425º.2 cups cheddar Cheese
- Dice tomatoes and white onion and roughly chop bacon1 roma Tomato, 2 slices White onion
- Stir together ranch dressing with chipotle sauce1/3 cup ranch dressing, 1 tsp chipotle pepper hot sauce
- Once cheese is melted, remove from oven. Top with bacon, tomatoes, onion and chipotle ranch
