  • Chicken Thighs – this is a staple if you’re making a Chipotle honey chicken recipe – that’s why the chicken is so good – cuz it’s chicken thighs which are juicier and more tender than chicken breast
  • Chipotle Sauce – these small cans pack a punch and are perfect for this recipe. Be sure you’re using these cans vs. a Chipotle hot sauce

This Chipotle Honey Chicken recipe is easy to make! You will need to prep because it needs to marinate overnight for the full flavor. I actually marinated mine for 2 days because I got busy. When you’re ready to cook – it takes just 10 minutes!

  1. In a bowl or ziploc bag, add all ingredients other than chicken thighs. Seal and mix together.
  2. Add chicken into marinade and seal.
  3. Marinate overnight in the refrigerator.
  4. Heat a large skillet over high heat and add 2 tbsp olive oil. Add chicken thighs and lower to medium high heat for 3-4 minutes on each side until temp is 175º
    • Dark meat can cook to a higher temp and not dry out – it will actually make it more tender
  5. Chop cooked chicken and drizzle with honey. Serve in burritos, quesadillas or bowls.

Yes – I would recommend putting the peppers & sauce into a mini food processor or blender to make it a sauce and incorporate the peppers into the honey chipotle mixture even more. I just find the sauce is easier and less than $2/can!

Sure! It won’t be as juicy – but you definitely can. I recommend placing chicken on a cooking rack over a cookie sheet and roasting chicken breast in the oven at 425º for 20-25 minutes until chicken is 160º. Then let rest for 5 minutes. This will ensure the juiciest chicken. Searing chicken breast on the stove tends to dry it out.

Yes – store in an airtight container for up to three months.

Store in airtight storage containers (these are my favorite) in the refrigerator for up to 5 days. Reheat in the microwave for 45-60 seconds.

Yes – you definitely can pop those chicken thighs in the air fryer for 7 minutes at 380º.

Yes – you definitely can! I just feel like chicken thighs cook so quickly – it’s not worth pulling out the grill – but add a grill pan and cook the peppers and onions at the same time!

In the restaurant – it has a kick but it’s not “fire in the hole” spicy! That’s the beauty of making it at home – you can make it as spicy as you like! If you use the can with the peppers and blend them – it will be a little spicier.

You should marinate at least 12 hours but 24-48 is even better.
