Traeger Smoked Bologna Burnt Ends are a fun and easy appetizer for any BBQ or summer party! Toss them in mustard and seasoning and then pop them on the smoker. Great to make when you want to smoke multiple things at the same time! Take these off early and snack away!

Ingredients for Bologna Burnt Ends
Who knew you could buy a CHUB of bologna? I was planning on going to the deli and asking for it unsliced but didn’t have to! Here’s everything you need:
- Chunk Bologna – they’re also called Bologna CHUBS…I didn’t make that up. You can use a pork bologna or beef bologna. The brand I used was a Chicken/Pork/Beef combo.
- Yellow mustard – you can get crazy with your mustard flavor! I literally have a whole drawer of them!
- Historic BBQ Red – you can use any BBQ seasoning – Historic Red is my favorite
- Williamson Bros BBQ – again use any BBQ sauce you like – Williamson Bros is a restaurant in the Atlanta area and this is a very light, thin sauce but with lots of seasonings! A nice tangy honey gold bbq sauce would be good too!

Recipe Variations for Burnt Ends
You can use lots of kinds of pig and cow for burnt ends. Here are some of my favorites:
- Brisket – Brisket burnt ends were the first I ever got to try and it was at the Historic BBQ truck!
- Pork Belly – I’ve had Pork Belly Burnt Ends at a variety of restaurants and they are just melt in your mouth!
- Hot Dogs – pretty much the same as bologna if you think about it – but I’ve seen it done!
- Chuck Roast – this is next on my list to make – like literally next week! Gives you the idea of brisket without having to make the brisket first!

How to make Traeger Bologna Burnt Ends
This is an easy recipe to make – as are most things on the Traeger – just get it on there and let it smoke! Low and slow – then we’re going to bump it up at the end to set the sauce. Here’s how to make these Smoked Burnt Ends.
- Using a sharp knife, slice whole bologna into 1.5” cubes
- Place bologna in a large bowl and toss with mustard and bbq seasoning rub. Heavily coat all sides.
- Preheat Traeger to 250º and be sure you have enough pellets in the smoker. I recommend Cherry or Hickory for this recipe.
- Place bologna bites on oven-safe racks fat side up. For 32 oz – I used two racks. Place racks onto the Traeger.
- Smoke for 1 hour until they have a nice color. Check the temp with your meat thermometer and remove when the bites are 200º.
- Move bites to a grill skillet or disposable aluminum pan. Raise temp on traeger to 375º. Toss bologna bites with bbq sauce so they are lightly coated like you’re glazing them.
- When grill is at temp, place pan back in grill for 10 minutes and then remove and enjoy!

Store leftovers in an airtight container (I like these glass storage ones) in the refrigerator for up to a week. Reheat in the microwave for 1-2 minutes or in the air fryer for 3-4 minutes.
Yes – you can place a packet of wood chips in aluminum foil next to the charcoal. You will need to change out the wood chips every 30-60 minutes to keep the smoke coming.
Yes! Mix together melted butter & honey! Drizzle that over the top – maybe even a few shakes of hot sauce!
Nope – I have a Traeger but any smoker type will work!
It’ll only take a little over an hour to smoke these yummy bites!
