Smoked Stuffed Peppers are my favorite dinner because its a full meal in an edible bowl! Stuffed with sausage, rice, vegetables, rice and cheese – they take on a delicious smoky flavor from the Traeger!

  • Smoky Flavor – The Traeger adds just the right amount of smokiness – it’s delicious without being overpowering.
  • Fresh! These peppers are loaded with veggies and I used fresh peppers from the farmers market so this is a meal straight from the garden.

Stuffed Pepper Ingredients

Stuffed Peppers are a delicious dinner any time of year – you can really add lots of ingredients to them – but this is a pretty classic version with onions, carrots, tomatoes, rice and cheese. Here’s what you’ll need:

  • Bell peppers – use what you have – red, yellow or green peppers all work!
  • Italian sausage – feel free to use ground beef or ground turkey if you like – but I challenge you to try the ground sausage! My contractor was home when I made these and said he’d never had with sausage and he loved it!!! I promise – it’s a game changer!
  • Onion
  • Carrots – love using my rotary grater for carrots & the cheese!
  • Garlic – you can use fresh garlic cloves or the “jarlic” minced garlic
  • Diced Tomatoes
  • Marinara – I had some leftover marinara in the fridge so I used that – but you could also use tomato sauce
  • Cooked Brown Rice – you can also use white rice. I like to cook my rice in chicken or beef broth to add more flavor!
  • Shredded Cheddar Cheese

Stuffed Pepper Recipe Variations

  • Chicken – you could also use shredded chicken in the stuffing
  • Mexican – make a more Mexican version by using salsa instead of marinara, add a little sour cream for creaminess, add taco seasoning and black beans to your meat and top with jalapeño slices!
  • Shrimp – Swap the sausage for shrimp and make these Shrimp Stuffed Peppers!
  • Spicier – if you want to add a little kick to this recipe, add diced jalapenos and red pepper flakes to the stuffing mixture
  • BBQ – go all out on the BBQ with pulled pork, jalapenos, BBQ sauce, diced tomatoes and rice for the stuffing

How to make Stuffed Peppers on the Smoker

I love using my Traeger to add flavor to any meal. The lower the temp – the more smoke flavor you’ll get in your dishes. I went for a moderate 300º temp to get some smokiness but still get dinner done in weeknight dinner time!

  1. Preheat the smoker to 300º
  2. Prepare the bell peppers slicing in half from the top down keeping the stem in tact. Clean out the inside of the peppers by removing the seeds and ribs.
  3. In a large deep dish skillet or dutch oven over medium-high heat, sauté the sausage, onion, carrots and garlic. You don’t need olive oil because the sausage has oil in it.
  4. To the pan, add diced tomatoes, marinara sauce and cooked rice. Turn off heat and let sit for 5 minutes. 
  5. Add 1.5 cups of the shredded cheese and stir.
  6. Fill bell pepper halves with the stuffing mixture and place on a cookie sheet. 
  7. Place baking sheet with the peppers into the smoker.
  8. Smoke peppers 60 minutes.
  9. Top the peppers with the rest of the cheese and smoke for about another 5 minutes, or until the cheese has melted.
  10. Remove cookie sheet from the smoker and serve with a sprinkle of fresh parsley.

Tips, Tricks & FAQs

How do you store and reheat leftover stuffed peppers?

Store leftovers in an airtight container (I like these glass ones) in the refrigerator for up to a week. Reheat in the microwave for 1-2 minutes or in the air fryer for 4-5 minutes.

Can you freeze stuffed peppers?

Yes – you’re best off freezing the peppers before cooking them. Fill and place in a ziploc bag and freeze for up to 3 months.

Can you make this recipe in the oven?

Yes – you’ll lose that smoked flavor – but you can bake these at 350º for 45 minutes.

Can you put the peppers directly on the grill grate?

Yes – you can. It was easier to just keep them on a sheet for me – but directly on the grates will work too!

Ingredients
  

  • 10 medium bell peppers
  • 1 lb Italian sausage
  • 1 onion diced

  • 4 cloves garlic minced
  • 15 oz diced tomatoes
