Teriyaki Salmon Noodles

Teriyaki Salmon Noodles are a delicious, healthy and quick dinner – great for any night of the week! The Teriyaki is sweet and there are LOADS of vegetables in the noodles – it’s a great one-bowl dish!

I love that I can swap out veggies or noodles based on what I have in the fridge! I love rice noodles so I used them – but you could easily use Soba or Udon noodles – or even zoodles or rice!

What’s in the dish?

First you need salmon! I get my salmon from Sitka Salmon Shares. It’s straight from Alaska – more on that below!

Next you need to marinate the salmon in Teriyaki sauce for at least 30 minutes. You can make your own – or purchase a pre-made. My favorite is Keli’s Hawaiian Luau Teriyaki sauce – you can buy it in stores in Washington, Oregon and Hawaii – or get it online from their site. (It’s worth it!!)

After that – you make your noodles – there’s lots of yum here!

  • Rice noodles – you could also use udon or soba – or even rice
  • Oil – I used a combo of sesame and olive oils
  • Veggies – onion, red pepper, snow peas, spinach and mushrooms (get exotic – try enoki & shitake!)
  • Soy sauce
  • Sweet Thai Chili Sauce
  • Garlic
  • Fresh lime juice

How do you make Teriyaki Salmon Noodles

This dish will take a couple of pans and some multi-tasking skills – but you can do it!

  • Get the salmon marinating before dinner – I put it in mid-afternoon
  • Make your noodles – they only take five minutes if you’re using rice noodles and be sure to rinse them with cold water so they don’t keep cooking
  • Make your salmon and veggies at the same time in separate pans – I prefer making my salmon in the air fryer – less oil and set it & forget it!
  • For the veggies, heat sesame & olive oil in a non-stick skillet first. Then add your onion and peppers. After a couple of minutes – add the rest of the veggies (mushrooms & snow peas), garlic and soy sauce.
  • Time to put it all together: – the noodles with thai chili sauce, leftover marinade, spinach and lime juice!
  • Last – but not least – top with your salmon and serve! So delicious!

Ingredients
  

  • 1 lb salmon

Teriyaki Sauce

  • 1/2 cup soy sauce
  • 4 tbsp brown sugar
  • 4 tbsp olive oil
  • 2 tsp ginger grated
  • 1 tsp corn starch

Noodle Ingredients

  • 5 oz rice noodles or soba or udon
  • 2 tsp sesame oil
  • 2 tsp olive oil
  • 1/2 onion thinly sliced
  • 1/2 red pepper thinly sliced
  • 8 oz gourmet mushrooms shitake, enoki, oyster, crimini or button
  • 1/2 cup snow peas
  • 1 tbsp garlic minced
  • 1 tsp soy sauce
  • 1/4 cup sweet thai chili sauce
  • 1 cup spinach leaves chopped
  • 1 lime

Instructions
 

  • Whisk teriyaki sauce ingredients together (soy sauce, brown sugar, oil, ginger and corn starch). You can also use 1 cup pre-made teriyaki sauce instead.
  • Pour into a ziploc bag and place salmon in bag. Marinate for 30 min – 2 hrs.
  • For last 15 minutes of marinating, prep rest of items & start cooking
  • Cook rice noodles according to package directions, prep veggies
  • After noodles are cooked, rinse with cold water and drain. Set aside.
  • Heat sesame oil in a skillet
  • Add onions and peppers and cook for 2-3 min until soft
  • While veggies are cooking, prepare salmon – instructions below.
  • Add garlic, mushrooms, snow peas and soy sauce. Cook for 3-5 minutes until mushrooms are done
  • Add in chili sauce, drained noodles and 1/4 cup remaining marinade
  • Toss and remove from heat
  • Add spinach and juice from lime – toss again until spinach wilts slightly
  • Serve in bowls
  • Top with salmon

Preparing Salmon

    Option 1: Skillet – 7-8 minutes

    • Heat 1-2 tbsp olive oil in skillet
    • Remove salmon from marinade – do not discard
    • When oil shimmers, add salmon skin side down and cook 2-3 min on medium heat
    • Flip and cook 2-3 min more
    • Flip and cook 2-3 min more

    Option 2: Air Fryer – 12 minutes (easy, no mess!)

    • Remove salmon from marinade – do not discard
    • Place salmon skin side down in air fryer
    • Air Fry at 375 for 10-12 min

      My husband isnโ€™t a big fan of salmon, but he sure loved this recipe! Such a great and very delicious recipe. Definitely my daughter and Iโ€™s new favorite!

      This is sooooooo good! It will definitely be a permanent rotation for our meal plans. I was hesitant about the sweet chili sauce because only my youngest son and I like spicy food, but it’s hardly spicy at all and everyone enjoyed it. I could only find 8 oz of rice noodles, so I added all the marinade and some extra chili sauce. I also marinated the salmon overnight because that was easiest for me. Next time I want to try chicken instead of salmon and add broccoli!
