Weight Watchers No Bake Cheesecake is an easy-to-make, delicious dessert that actually fits into a diet plan! I’m a big fan of cherry pie filling for the topper – doesn’t it look amazing?!

I started with my Cherries in the Snow recipe and swapped everything out to make it with less fat and calories! This recipe is only 4 points per slice vs. 18 points per slice for the original!!! (green/blue/purple are all same points)

Weight Watchers No Bake Cheesecake Ingredients

This Weight Watchers No-Bake Cheesecake is made without heavy cream and without condensed milk – but it does have:

  • Low fat graham crackers – I used the cinnamon ones!
  • Fat Free Cream Cheese
  • Monk Fruit Sweetener (0 points!)
  • Sugar Free Vanilla Pudding mix
  • Vanilla
  • Fat Free Cool Whip
  • Light Pie Filling (I used cherry)

How do you make No Bake Cheesecake without a springform pan?

It’s super easy! No need for a springform pan! I just made this in a rectangular baking dish. Here’s how you make it:

  1. Take your cream cheese and Cool Whip out a couple hours ahead of time so they can soften
  2. Line the bottom of the dish with graham crackers – no need to do anything other than lay them across the bottom
  3. Beat the softened cream cheese until smooth with a hand mixer
  4. Using hand mixer on low, add in pudding mix, vanilla and monk fruit sweetener
  5. Add in Cool Whip – normally I fold in the Cool Whip but this mixture is fairly thick – so I had to use mixer
  6. Spread cream cheese mixture over graham crackers – dollop by spoonfuls onto crackers and smooth it out – it’s THICK!
  7. Spread pie filling over top of cream cheese mixture
  8. Refrigerate overnight

Can No Bake Cheesecake be frozen?

Yes! Cream cheese and Cool Whip can both be frozen so yes – you can! Be sure to store in an air tight container.

What can you use instead of Monk Fruit Sweetener?

You can use Splenda or any other zero point sweetener. They’re all cup for cup measurements to sugar. I like the Monk Fruit as it has less of a bitter after taste.

Can No Bake Cheesecake be baked?

No – why would you do that? It’s NO BAKE. Don’t bake Cool Whip.

Can No Bake Cheesecake melt?

Yeah probably. If you leave it out in the sun. I’m not sure it will melt but it will become runny and inedible.

Can No Bake Cheesecake be made in advance?

Yes! It’s best to make it the day before for sure. If you want to freeze it – you can do that as well. If making it ahead and freezing the whole cheesecake – I would wait to add pie filling until you serve.

Where should you store No Bake Cheesecake?

In the refrigerator – covered

Is No Bake Cheesecake vegan?

Not unless you’re using vegan cream cheese

    This cheesecake looks so delicious and very yummy! So glad I found this weight watchers recipe! Excited to make this again!

    1. it’s ok – my dish was like 7×9 – so 8×8 or anything in that range would work just fine.

  3. IS it okay to leave out the pudding mix? I know it may have a different flavor without it, but will it change the consistency..will it still set okay, as it now too runny
