These air fryer cherry tomatoes literally melt in your mouth! Roasting in the air fryer brings out this amazing natural sweetness! Use them as a side dish, on a pizza, on seared salmon or mix in with your favorite pasta.

Side Note: Yes – I know these aren’t cherry red – but trust me – the orange ones are so much sweeter!!!! They all cook the same though 😉

  • 1.5 cup sliced cherry tomatoes
  • 1 tablespoon olive oil
  • 1 tsp minced garlic
  • ½ teaspoon coarse sea salt

How to Roast Cherry Tomatoes in the Air Fryer

  1. Cut the tomatoes in half. Place in a single layer in a baking dish or pan that will fit in your air fryer basket. 
    • I found these cute mini pizza pans at Aldi that fit right in the basket (similar to this pan). You want to be sure to use a pan because you don’t want to lose any of the juices!
  2. Sprinkle with extra virgin olive oil, garlic and salt and toss lightly.
  3. Air fry for 10 minutes, stirring halfway through.
  4. Using potholders carefully remove pan from air fryer. Serve on pasta, chicken, salmon and more!

How to use Roasted Tomatoes

  • Side Dish – top them with fresh basil, a sprinkle of balsamic vinegar and a few crumbles of goat cheese for a perfect side dish or dip some crusty bread in the mixture!
  • Topping – these roasted tomatoes are rich, sweet and garlicky – they are delicious on salmon, chicken and even scrambled eggs!
  • Pizza Toppings – who needs pizza sauce? Just top some naan bread with roasted tomatoes, fresh basil and fresh mozzarella and you’ve got a pizza!
  • Pasta – take any leftover pasta and toss in roasted tomatoes and a little Parmesan cheese! Or add it to a jarred pasta sauce for additional flavor!
  • Soup – if you’re making a soup, use these instead of a can of diced tomatoes
  • Salads – I like a salad to have different textures and having the warm melty tomatoes with cold crunchy romaine is delicious!

Tips, Tricks & FAQs

How do you store and reheat leftover roasted tomatoes?

Store leftovers in an airtight container (I like these glass storage ones) in the fridge for up 3-4 days. You can freeze up to three months. Reheat in the microwave for 1-2 minutes. 

Can I make air fryer roast tomatoes with regular tomatoes?

Sure – roma tomatoes or grape tomatoes also work really well for this recipe as well.

What other seasonings are good with roasted tomatoes?

You can also use fresh cracked black pepper, garlic powder, onion powder, dried oregano, Italian seasoning, fresh herbs like basil, thyme or rosemary.

What if I don’t have a pan that will fit in my air fryer?

You can use an oven-safe shallow bowl or just remove the tray and use the bottom of the air fryer basket itself.

Should I use a piece of parchment paper to line the pan or the air fryer?

No – this is a juicy dish – it’s just going to make more of a mess.
