This Air Fryer Pork Loin Roast turns a lean cut into the juiciest boneless chops, with potatoes and carrots cooked right alongside it for a full family meal. Two keys to nailing it: marinate at least an hour (a citrusy Mojo Criollo is my go to), and pull it at 145 degrees so it stays juicy and doesn’t dry out!

  • Lean! The pork loin roast is a very lean cut of meat – it’s not the cut that will break down and fall apart when you cook it. Instead, the pork LOIN roast is basically where you get your boneless pork chops from.
  • Slow Roasted Flavor – In less than 45 minutes – you’ll get the slow roasted flavor that normally comes from a couple of hours in the oven!
  • Tender – This pork loin roast makes the most tender pork chops and all the juices are locked in by the air fryer! It’s the best texture!

Air Fryer Pork Loin Roast Ingredients

Pork Loin is already delicious – so you don’t need a lot to make it perfection. I love this simple store-bought marinade and use it for everything from chicken to steak to seafood and – of course – pork! Here’s what you’ll need:

  • Mojo Criollo Marinade – this citrus-based marinade is good for everything!
  • Pork Loin Roast – Be sure you’re buying a pork loin roast, not pork tenderloin. Pork loin is a wider 2-3 pound roast and is the same cut used for boneless pork chops. Pork tenderloin is much smaller and thinner and cooks much faster. If you have a tenderloin, use my Air Fryer Pork Tenderloin recipe instead.
  • Yukon Gold Potatoes – you can also use red potatoes
  • Carrots – you can use other veggies like green beans, cauliflower and onions if you’d like
  • Olive Oil
  • Texas Roadhouse Steak Seasoning – I like this blend but your favorite steak seasoning is fine here or make your own blend with spices like: salt, black pepper, garlic powder, paprika, onion powder and brown sugar!

What Temperature Should Air Fryer Pork Loin Be?

The secret to juicy pork loin is not overcooking it! Check the thickest part of the roast with an instant-read thermometer and remove it when it reaches 145°F, then let it rest for 5-10 minutes before slicing. No more dry pork!!!

Cooking Pork Loin Roast in an Air Fryer

It’s surprising how easy it is to cook a pork loin roast for family dinner – the key is marinate the pork loin in your favorite marinade. You should marinate the roast for at least an hour and up to overnight.

  • MARINATE pork loin roast for minimum 1 hour – up to overnight – in Mojo Criollo Marinade
  • REMOVE pork loin roast from marinade and place inside air fryer basket
    • AIR FRY at 400º for 15 minutes
  • SLICE potatoes in half and carrots into 2″ chunks. If potatoes are larger, slice in smaller pieces (size for 2 bites)
  • ADD potatoes and carrots to the basket with the pork still in the air fryer. Drizzle the vegetables with olive oil and sprinkle with steak seasoning.
  • CONTINUE AIR FRYING the pork and vegetables together at 400°F for another 25 minutes, or until the center of the pork reaches 145°F.

  • What is the difference between a pork loin and a pork tenderloin? A Pork Loin Roast is 2-3 pounds, wider and flatter, and can be a boneless or bone-in cut of meat. The tenderloin is a long, narrow, boneless cut of meat that comes from the muscle that runs along the backbone. These are really skinny, 1-2 pounds and usually come pre-marinated and pre-packaged at the grocery store.
  • What is the difference between a pork loin roast and a pork shoulder roast? As mentioned above the pork loin is 2-3 pounds and very lean. Pork shoulder or pork butt isn’t a substitute either. It’s a fattier, tougher cut that’s better suited for low-and-slow cooking and pulled pork.
  • How many minutes per pound do you cook a pork loin in the air fryer? 12-18 minutes per pound
  • How do you store and reheat leftover pork loin? Store leftover pork roast in an airtight container (I like these glass ones) in the fridge for up to a week. You can freeze up to three months. Reheat in the microwave for 1-2 minutes.

  1. Do you take the pork loin out at 15 minutes? Or do you add the veggies and cook *everything for another 25 minutes?
